Kumquat & Coconut Cookies {Grain & Sugar-Free}

Whew, two recipe contests in the same week!  I don’t know what’s come over me.  It must be all that state fair competitive spirit leaking over into my everyday baking life!  This one is for Baker Bettie’s Cookie Wars, in which she charged us with a mission to invent a cookie using at least two of the following ingredients:

I’m really curious to see how many people are daring and creative enough to use tomato, vinegar (wait, I’ve done that and it’s fabulous! lol), beer, rosemary, etc.  I’m thinking there are going to be a few savory cookies in the mix!

But me, well, you know my affinity for sweets, so that’s what I went for.  I didn’t intend to make a wholesome cookie, it kinda just happened in the evolution of my creative process.  Here’s how it went.

My first inclination was to create a yogurt and honey spice cookie, which I knew would be a cake-like cookie because of the honey, and since I don’t like cakey cookies unless they’re part of a whoopie pie, I figured I’d also make a yogurt and honey filing for them.

Then I remembered the bag of coconut flour in my refrigerator that I won from Nutmeg Nanny’s giveaway several months ago, and thought it would work well here since the honey and yogurt would add a lot of liquid that usually isn’t in cookies, and you need more wet ingredients in any coconut flour recipe–it’s very thirsty and absorbs lots of moisture.  (I know this from a previous failure.)

I scanned the list again, trying to see if any other ingredients would pair well with the flavor of coconut and pondered over the kumquats.  I’d never had them but had seen them at the grocery store from time to time and always assumed they were miniature oranges.  I remember asking Dennis, “What is the point of these?  It would take forever to peel enough of these to make them worth eating!”  But I Googled kumquats anyway, to see if they might work for me in my cookies.

I found out that the skin is the part that is sweet and delicious, and the inside is very sour.  Most people eat them whole to savor the contrast of sweet and sour.  (I tried this after buying them, and whoo-ey, even the sweet peel wasn’t enough for me to dig the sour explosion on the inside.  But the flavor is very good-very similar to an orange.)  I also found a recipe for kumquat chocolate chip cookies that described the kumquat peels as being great after baking because they get chewy like pieces of candy.  OK, I was sold.  I had to find me some kumquats.

Find them I did, and then I went to work.  I’m pretty happy with my creation!  These cookies have an exotic flavor profile, with a semi-tropical feel.  The honey wasn’t quite enough to balance the sour yogurt and and kumquats (yes, I totally tasted the raw dough. I always do. :) ), but the stevia made them nicely sweet like any good cookie should be.  I love the kumquat flavor, it is a perfect match with the coconut.  I added the spices because a recipe I have from my friend, Marina, called “Cream Cheese Cookies” uses them, but I honestly can’t say they really pronounce themselves on the palate.  They sort of just add a layer of mystery in the background to the overall exotic flavor.

The texture is soft and moist and very tender, which isn’t my usual choice for a cookie (I’m in the crispy on the outside, chewy on the inside camp), but these are so unique that it doesn’t strike me as “wrong.”  These cookies are supposed to be different, and it’s actually a nice texture…not unlike shortbread.  The one downside is that coconut flour makes them a bit grainy and while they’re not a dry cookie, the flour makes you thirsty after eating one.

All in all, these aren’t the typical American cookie, but I think they’d be perfect with tea.  In fact, I think I’m going to enjoy a few with a hot cup right now…

Kumquat & Coconut Cookies

½ cup unsalted butter, melted
½ cup raw, local honey
½ cup Greek yogurt (I used nonfat)
2 eggs
1 teaspoon vanilla
1 cup coconut flour
5 packets NuNaturals stevia powder
½ teaspoon ground coriander
½ teaspoon ground ginger
½ teaspoon mace
¼ teaspoon salt
½ lb. kumquats
1 cup shredded unsweetened coconut

Preheat oven to 350 degrees F.  Line two baking sheets with parchment paper and set aside.

Whisk the butter and honey together in a small bowl until combined, then whisk in the yogurt until combined, then the eggs and vanilla. Doing it in this way emulsifies the butter so that it doesn’t harden and get clotted when you add the cold yogurt and eggs.

In a separate large mixing bowl, whisk the coconut flour to get any clumps out, then whisk in the coriander, ginger, mace, and salt. Add the honey & yogurt mixture, and stir with a spoon until mixed. The dough will be thick and will get thicker upon standing. Set aside.

Pick off the small stems from the kumquats, then roughly chop them, removing seeds as you go. I don’t have a great knife, so I sliced each kumquat into four slices, then quartered each slice, otherwise I just would have gone nuts chopping like I do with nuts. Add the chopped kumquats into the cookie dough along with the coconut and mix well with your clean hands.

Scoop the dough onto parchment-lined baking sheets with a tablespoon-sized cookie scoop. You can place them fairly close together as they will not spread. Flatten each ball with the palm of your hand, and bake for 10-12 minutes, or until lightly golden brown around the edges.

Cool on a wire rack and store in an airtight container.

Notes: coconut oil can be substituted for the butter to make these dairy-free. If you are using a different brand or form of stevia, add it in to taste. There is no gluten to toughen the cookies, so you can mix and re-mix to your heart’s content as you add ingredients to get the right balance to suit your tastes.

Amish Friendship Banana Coffee Cake with Vanilla Chai Streusel

As you may recall, I’ve been working on perfecting my banana bread recipe for next year’s state fair competition.  I’m on a personal mission to beat a certain lady whose banana bread has won first place for the last three years I’ve participated.  I’m not sure if it’s even possible, because she seems to have magical baking powers, judging by how many ribbons she wins each year.  But if I lose this year, it’s not because I didn’t try.

So far I’ve made seven recipes and have frozen a piece from each loaf so that by the time I feel that I’ve got a winner, I can do a taste-test comparison to make sure.  My husband and his co-workers (they’re my judges) all told me to stop after loaf number three, and they keep telling me that none of the loaves since that one have been as good, but I have to make sure I’ve really got the BEST one.  So I soldier on.

So what does my banana bread quest have to do with this coffee cake?  Well, it was actually inspired by the most recent banana bread I made. The bread version did not turn out as I had hoped, but this cake is utterly perfect.  The winning loaf of banana bread was one that I added cardamom to on a whim, and I figured that adding all the chai spices to it would make it even better.  I keep trying it in different ways, the latest with a chai streusel, but for some reason it’s never as good as the cardamom alone.  It’s giving me a twitch.  I really don’t want to submit a bread called “cardamom banana bread,” when I could submit “chai banana bread,” which sounds so much cooler!

Anyway, after making the chai streusel banana bread, which was good but not knock-your-socks-off, I still had three over-ripe bananas waiting to be used and I was just tired of reinventing my banana bread.  I had to do something else with those bananas.  I happened to get an email notification for a contest for new Amish Friendship Bread recipes at the same time my bananas were screaming to be used, so I defrosted one of the Amish Friendship Bread starters I saved months ago, and created this coffee cake with it.  I’m really hoping to get that $75 Amazon gift card with this one! :)

This is one delicious coffee cake, people.  I really love the flavor of the banana cake and the vanilla chai streusel with the crunchy toasted walnuts.  Match made in heaven.  This is my favorite Amish Friendship Bread recipe I’ve made to date!

Amish Friendship Banana Coffee Cake with Vanilla Chai Streusel

Vanilla Chai Streusel:
¼ cup brown sugar
¼ cup granulated sugar
1 vanilla bean, split & seeds scraped out
1 ½ teaspoons cinnamon
1 ½ teaspoons cardamom
¼ teaspoon ginger
¼ teaspoon cloves
¼ teaspoon nutmeg
Pinch of salt
¾ cup toasted walnuts, finely chopped
½ cup unsalted butter, melted
1 cup all-purpose flour

Banana Coffee Cake:
3 large over-ripe bananas
½ cup (1 stick) unsalted butter, melted
3 large eggs
¼ cup sour cream or Greek yogurt
1 cup Amish Friendship Bread Starter
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup granulated sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt

Preheat oven to 350F. Generously butter a 13”x9” cake pan and set aside.

To make the chai streusel, combine the sugars, vanilla bean seeds, cinnamon, cardamom, ginger, cloves, nutmeg, and salt in a small mixing bowl; stirring with a fork until well combined. Stir in the walnuts, then pour the butter over the top and mix until combined. Add the flour and mix until incorporated. Set aside.

To make the coffee cake, mash the bananas in a large mixing bowl. Whisk in the melted butter until completely incorporated. Add the eggs and whisk them in until fully incorporated. Add the sour cream and whisk until well combined, then whisk in the starter and vanilla until combined. Add the remaining ingredients and beat until well mixed.

Pour batter into the prepared cake pan and sprinkle the streusel over the top. Bake for 40 minutes or until a tester inserted in the center comes out clean. Cool completely before serving or covering with plastic wrap. Serve at room temperature.

Bird’s Nest Cookies

Most of my readers probably know by now that I’m a Christian.  What might surprise you is that I don’t celebrate Christmas and Easter as Christian holidays.  We do the secular stuff with our families, exchanging gifts, hunting for baskets, but we do not recognize any affiliation of those holiday traditions with our faith.  We recognize Christ as our savior, remember his birth, life, death, and resurrection, but we do not do it just because it’s Easter or just because it’s Christmas–holidays that ultimately have pagan roots and nothing to do with Christ, despite the emphasis put on Him during this time by many. Not that I despise that emphasis, it’s actually refreshing, but we choose to keep these holidays secular while keeping our focus on Christ year-round.  Make sense?

Hello?  Is anyone left?  Hopefully I didn’t lose everyone by starting out on such a serious note.  I have lots of thoughts on this subject…and maybe I should share them some day.  I was thinking about starting a “my faith” page on my blog where I can file my thoughts on spiritual matters in more detail.  Let me know if you’d be interested.

Anyway, whether you celebrate Easter or not, these moist chocolate macaroons shaped into nests with white chocolate truffle “eggs” are a perfect spring-time treat!  I made these a couple years ago and nearly forgot about them until I ran across the photos I took.  Perfect timing!  I hope you enjoy them, I know our family did!

Bird’s Nest Cookies

2 squares (2 oz) unsweetened baking chocolate
2 egg whites, room temperature
1/3 cup hazelnuts, toasted and chopped*
1/4 teaspoon salt
1 teaspoon real vanilla extract
1/2 cup powdered sugar
1/2 cup sweetened condensed milk
1 (14 oz) bag sweetened shredded coconut
16 to 18 white chocolate Lindt Lindor balls (2 bags), or other egg-shaped candies

Move the oven racks to the upper and lower thirds of the oven and preheat to 275 degrees. Cover two cookie sheets with parchment paper.

Melt baking chocolate in a small bowl in the microwave on high 30 seconds at a time. Stir after each stop until melted; set aside.  With a hand mixer or stand mixer, beat the egg whites on high until stiff and glossy. Add the salt, vanilla extract, powdered sugar, sweetened condensed milk, and chocolate. Beat until mixed. Stir in the coconut and hazelnuts. Scoop into mounds with a small (size 24) ice-cream scoop or a 1/4th cup dry measuring cup. Place on cookie sheets and make an indent in the middle with your thumb.

Place both cookie sheets in the oven and bake for 20 minutes. Switch the cookies to the opposite shelf halfway through baking. This will prevent over-browning. Meanwhile, unwrap the candy.

Move cookies to a cooling rack and allow to sit for five minutes, or until they are barely warm to the touch. If you place the truffles on top while they are more than barely warm, they will melt into goo. If you are using candies with a shell, wait until the cookies are cool to place them on top, or the shells will crack. For the truffles, working quickly, set the Lindt balls on top of the cookies. Let cool completely. The Lindt balls may drip a little so you may want to place a sheet of parchment underneath the cookies.

*To toast the hazelnuts, place them in a small bowl and microwave on high for 30 seconds. Stir, and microwave another 30 seconds. Immediately rub together in a paper towel to remove a little of the excess skin. Leave most of the skin on. Chop coarsely and set aside.

Makes 16 to 18 large cookies.

Guiness Brownies with Bailey’s Cream Cheese Swirl

In the name of culinary exploration, I bought a single bottle of Guiness to make Wednesday’s cupcakes, knowing I could never use an entire 6-pack.  Unfortunately, the bottle was pretty ginormous so I still have more than half of it left.  I also have quite a bit of Bailey’s left, and since I can’t give this stuff to people I know who drink because they either don’t drink anything but the occasional wine or have drinking problems, I’m either going to have to toss it or keep baking up a storm with it.  And you guys know I can’t waste anything, right?

Hence, these brownies.  These crazy, rich, gooey, decadent brownies.  I went with my Kahlua brownies recipe, switching out the Kahlua for Guiness, and then went a little crazy with the mix-ins, adding butterscotch chips, white chocolate chips, and walnuts.  Then I glanced the cream cheese in my fridge and got excited, thinking of my Brownie Cakes recipe and using it as a springboard to create a Bailey’s Irish Cream cheese swirl.

I liked these a lot, despite the Guiness.  I’ve discovered from reading Guiness & chocolate recipe reviews on blogs that I may be the only blogger alive not in the “Yay, Guiness and chocolate are the best combo evarrrr!” camp, but at least the flavor was not overpowering here, thanks to the sweet chips and cream cheese swirl.  There is a slight yeasty flavor from the Guiness, which is interesting but not off-putting.  For most people, that would translate to, “Yaaaaaaay, Guiness brownies are the best thing EVARRRR!!!!”

The only bad thing about these brownies (unless you want to count the calories, but who counts dessert calories??), is that they used up so little of this leftover alcohol.  I’m giving up on the Guiness, but as for the Irish cream…Bailey’s Banana Bread anyone?

Guiness Brownies with Bailey’s Cheesecake Swirl

Guiness Brownies:
1 brownie mix
½ cup (1 stick) butter, melted
¼ cup Guiness Extra Stout beer
1 egg
Optional mix-ins (add up to 1 ½ cups total): chopped walnuts or pecans, caramel bits, butterscotch chips, white chocolate chips, milk chocolate chips, or semi-sweet chocolate chips

Bailey’s Irish Cream Cheese Swirl:
1 (8 oz) package cream cheese, softened
1/3 cup granulated sugar
1 egg
1 tablespoon Bailey’s Irish Cream

Preheat oven to 350 degrees. Grease the bottom only of a 9×13” baking pan and set aside.

Combine the first four ingredients in a large mixing bowl and whisk until shiny and smooth, about a minute. Add optional mix-ins and stir until well combined. Spread into prepared pan; set aside.

Beat the cream cheese and sugar in a small mixing bowl until creamy, then beat in the egg and Bailey’s Irish Cream. Drop batter by spoonfuls on top of the brownie batter and swirl through with a knife.

Bake for 40 minutes, or until the cheesecake is golden on top and the brownies are puffed in the middle but firmer at the edges. Allow to cool completely before cutting.

OK, so this blog was too long to include this story before the recipe, but I wanted to put it at the end for those whose patience is still holding.

In high school drama class, we were doing a project where we were creating a spoof episode of the X-Files.  I remember nothing about the episode we came up with, except that some genius decided to cast me as an evil leprechaun.  (Speaking of evil leprechauns, doesn’t that one in my first picture look a little sadistic?)  We were actually filming it, just like a real TV show.

I showed up on filming day dressed head to toe in bright green.  I had no idea what I was going to wear for the role, but my mother happened to have a pair of bright green corduroy pants (oh, the glorious high fashion of the 90s!) stashed away in her closet.  She was a tiny woman and even at 115 pounds, I really had to stuff myself into those things and could hardly breathe all day.  I paired it with a matching shirt and called it golden (or emerald, if you will).

For my scene, we were filming in the hall and I was told to run off laughing after delivering my line.  It wasn’t until the camera started rolling that I thought to wonder how long I should run while laughing.  Convinced I should fight my urge to do it only a few seconds, thinking it was just my shyness trying to get the better of me, I tore off down the hall, squealing insanely with evil leprechaun laughter, throwing my hands up over my head and swinging them wildly back and forth as I ran…all the way down the hall.

That’s right.

I passed about five classrooms, squealing with high-pitched insane laughter at the top of my lungs.

When I turned back around, hoping I’d laughed long enough, there were curious heads leaning out of every single closed door I had passed, and in the far distance, I could see my classmates rolling with laughter while my drama teacher looked like he wished he could crawl under a rug.

I could have died.  The walk back to join my drama group was the longest walk of my life.  Every classroom stared at me as I passed, surely wondering who the crazy girl dressed in green was and if there was anything beyond my insanity that spurred the laughter that disrupted their class.

And of course, after that day, I was known far and wide as “the evil leprechaun.”

Guiness & Bailey’s Chocolate-Caramel Cupcakes

This seems to be happening to me more and more, the longer I blog: I either create a recipe out of my own head, or I see a blog with a recipe and I immediately think of a new direction I want to take it in.  I type out the recipe, including the measurements and steps.  Then, after I’ve made my new and improved recipe, I discover that someone else already did it.  Kinda takes the wind out of my sails!

This has happened twice just this week.  I typed up a recipe for banana bread (I always type up baking recipes before I actually go to town, since they require more precision than just throwing things in a pot and tasting as you go along) that I thought was pretty stinking original, but before I’d even made it, I found that same recipe, almost exactly with the same ingredients and measurements except for just a few things, on Steak & Potato Kinda Girl’s blog (it was a Joy the Baker recipe, though, from her new cookbook).  I kinda had a freak-out and changed my recipe just so I wouldn’t be a copycat, even if I did come up with it on my own.  (I really want the banana bread recipe I win with at the fair this year *knock on wood* to be my own creation.  I’m in the process of creating the BEST recipe (or discovering, if I must) so I can beat my baking nemesis–more about that here.)

Then I decided I was going to make some Guiness chocolate cupcakes for St. Patrick’s Day and came up with my own decadent recipe, using this cake recipe, and using inspiration from this cake to add in some caramel to compliment the Guiness, chocolate, & Bailey’s Irish Cream flavors.  Then I happened to stumble upon Annie’s Eats, who has a spookily similar recipe.  She’s got the Guinness cupcake, the Bailey’s ganache filling (sans caramel), and Bailey’s Irish Cream frosting.

How is this even possible?  Is this some weird phenomenon among food bloggers that we’ve read so many of each others blogs that we start thinking the same?  Or am I just a freak of nature?  (Don’t answer that.)  Well, whatever it is, I’m considering myself flattered to have come up with similar recipes as the likes of Joy & Annie, who I respect greatly.  Who knows, maybe I’m becoming one of these “great minds” that “think alike.” :)

Well, despite these cupcakes having doppelgangers in who-knows-what corners of the blogosphere, I’m pretty proud of them because, besides the cake recipe, they are my own creation.  They are very decadent, as I intended, and are tremendously delicious.

Now, I need to tell you that I absolutely detest beer (except in beer bread, of course), and Guinness is at the top of my hate list *shudder*, but it somehow works in the chocolate cupcakes.  Although I would definitely prefer a Guiness-free cupcake, the stout flavor does add depth to the chocolate, making it deeper and more sultry, with a slightly bitter edge.  The rich caramel ganache is thick and sweet, and the frosting is like a fluffy silken dream-both elements a perfectly sweet compliment to the dark chocolate cake, and in my opinion, absolutely required to balance the cupcake.  You get quite a heady feeling when taking a bite of these–although low in alcohol*, they are very “boozy” tasting (at least to my virgin palate), but not in an offensive way.  Still, I wouldn’t recommend you try serving these to your toddler.

*A last note to those worried about the alcohol content.  It bakes off from the cupcakes, leaving only the flavor behind, and the amount in the filling and frosting is not much more than you’d get from using vanilla.  So never fear, you will not get intoxicated from eating one of these, though I still consider them to be an adult treat.  To nix the alcohol completely, I believe you could use Irish Cream coffee creamer in place of the real Irish Cream in this recipe.   I hope you enjoy!

Guiness & Bailey’s Chocolate-Caramel Cupcakes

Guiness Chocolate Cupcakes:
1 ½ sticks unsalted butter (cold is fine)
¾ cup unsweetened cocoa
1 cup Guinness Extra Stout (cold is fine)
1 tablespoon vanilla extract
1 ½ cups granulated sugar
1 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 eggs

Bailey’s Chocolate-Caramel Filling:
½ cup semisweet chocolate chips
¼ cup caramel sauce, plus more for garnish (I used homemade)
1 tablespoon Bailey’s Irish Cream
½ cup powdered sugar, as needed

Bailey’s Irish Buttercream:
2 sticks unsalted butter, softened
1 lb. (4 cups) powdered sugar, sifted
3 tablespoons Bailey’s Irish Cream

Preheat oven to 350 degrees. Line two dozen cupcake tins with papers.

In a small saucepan, melt butter and whisk in the cocoa powder until smooth. Stir in the Guinness and vanilla extract and remove from heat.

While the Guinness mixture is cooling, whisk together the sugar, flour, baking soda, and salt. Pour the Guinness mixture onto the dry ingredients, then add the eggs and whisk until the batter is shiny and smooth, about a minute. Divide batter between cupcake tins, filling half full. Bake for 17-20 minutes, or until a tester comes out clean. Remove from pans to cool completely on a wire rack.

Meanwhile, make the filling. Combine the chocolate and caramel sauce in a microwave-safe bowl and heat on 50% power for 1 minute. Stir until the mixture is smooth and glossy, then stir in the Bailey’s Irish Cream. Set aside to cool and thicken.

Lastly, make the buttercream. Beat the butter until creamy, then add the sugar and Bailey’s. Beat on low until mixed, then increase speed to medium and beat until fluffy, light, and silky, about five minutes. Set aside.

Return to the filling, which should be room temperature by now. (If not, refrigerate for five minutes and stir, repeating until cooled completely.) Remove two tablespoons to a small bowl, then stir in powdered sugar ¼ cup at a time into the remaining filling, until the filling is your desired thickness.

Put the filling into a pastry bag fitted with a round tip or a squeeze bottle with a nozzle. Insert the tip into the top of each cupcake and squeeze briefly to fill, stopping once the top starts to rise. Once all are filled, pipe or spread the buttercream on top. Drizzle with the reserved filling and caramel sauce. Serve at room temperature. If making more than two days in advance, you can keep the cupcakes in the refrigerator and remove them two hours prior to serving.

Andes Mint Cupcakes

Guess what???  It’s Monday and I have the day off with my husband.  I’m SO excited!  Before I became permanent and my schedule changed, we had the weekends off together, but now we only get one day off together once every five weeks so it’s cause for celebration.  I’m going to relish it.

Speaking of my husband and celebrations, I made these cupcakes for his birthday in December, and everyone at the party fell in loveMel calls these “over-the-top” and I’d have to agree.  It starts with a moist, deep chocolate cupcake.  Then there’s the cool & creamy mint frosting.  Garnished with peppermint ganache and an Andes mint.  But there’s more to these cupcakes than what meets the eye, and my only regret is that I did not have the chance to snap a photo of the inside to show you they are also filled with the same peppermint ganache that is drizzled over the top.  Making them, you might say, over the top. :)

These would be great for your St. Patrick’s Day festivities!

Andes Mint Cupcakes

1 recipe of your favorite chocolate cake*, baked into 24 cupcakes and cooled completely

Chocolate Mint Filling:
1 cup semisweet chocolate chips
6 tablespoons heavy cream
2 teaspoons peppermint extract
2/3 cup powdered sugar

Mint Buttercream:
1 cup (2 sticks, 16 tablespoons) butter, softened to room temperature
8 ounces cream cheese, softened to room temperature
2 lbs. powdered sugar
1/2 cup heavy cream
1 teaspoons pure vanilla extract
2 teaspoons peppermint extract
Green food coloring

24 Andes mints for garnish

For the mint filling, place the chocolate chips and heavy cream in a small microwave-safe bowl and heat for 1 minute at 50% power. Stir. Repeat the process until the mixture is smooth. Stir in the peppermint extract and powdered sugar, whisking until smooth. Let the mixture cool to room temperature (but don’t let it get too stiff) and pour it into a disposable pastry bag fitted with a small round tip, or a squeeze bottle with a tip.

Insert the decorating tip or tip of the squeeze bottle into the center of the cupcake and press gently to fill the middle of the cupcake with the mint ganache.  You can be pretty generous, squeezing until you see the top of the cupcake start to rise a little. Repeat with the remaining cupcakes.

For the frosting, in a large bowl, beat the cream cheese and butter until light and fluffy. Add the powdered sugar and mix until smooth. Add the heavy cream and peppermint and vanilla extracts. Beat until light and fluffy. Add green food coloring until the color you like is achieved.

Frost the cooled, filled cupcakes with frosting (using a large star tip, I used Wilton # 1M) or simply spread the frosting in a large dollop (again, you can be generous-there is plenty) with a butter knife or flat spatula. Garnish with a drizzle of leftover ganache (make sure the ganache is completely cool or it will melt the frosting when you drizzle it on top of the cupcake), and an unwrapped Andes mint.  Serve at room temperature.

*I used a devil’s food cake mix, but this is my favorite from-scratch chocolate cake recipe.

I had to share a few more photos from his party, which was actually only half for his birthday (our preacher and his wife had a holiday dinner/birthday party combo).  One of the games we played was holding paper plates on top of our heads and trying to draw a picture of Dennis playing his guitar without looking.  You have no idea how difficult this is until you try to do it!  This is what I ended up with:

Skinny Dark Hot Cocoa


Hot cocoa?  Hot chocolate?  I’ve always said hot chocolate, no matter if it’s made with real chocolate or cocoa powder or a mix.  I also have always said pop, not soda or soda pop.  Potato, potahto I guess.  What about you?

Anyway, remember how Dennis and I weren’t planning on having sugar on Valentine’s Day?  Well, it would be just be unAmerican not to have any chocolate on the day when the rest of the country is eating 58 million pounds of it.  (I know, right?)  So, inspired by Faith’s delicious Skinny Caramel Hot Cocoa, I made this plain version for our Valentine’s Day dinner dessert, only changing the basic recipe a smidge to deepen the chocolate flavor (had to make up for our lack of chocolate candy, you know).  We like our chocolate dark in this house.

This hot cocoa is so sweet, so chocolatey and delicious, creamy even, that you wouldn’t guess that it’s fat and sugar free.  That it’s actually healthy.  Protein and calcium-rich milk?  Check.  The antioxidant power of cocoa powder?  Check.  Totally natural with no chemical sweeteners?  You got it.

I’m usually semi-opposed to healthifying sweet treats because, in my opinion, they’re called treats because they are meant to be enjoyed.  Mostly what cutting out fat and sugar does is make them less enjoyable (although I hope to prove my own theory wrong because I’m going to be experimenting soon, given that we’ve nixed sugar in our house!).  But when you can do it with such a satisfying result, I’m all for feeling great about drinking something that tastes so sinful.

*A note about stevia: I’m a huge advocate of using stevia to sweeten things, versus chemical sweeteners and even real sugar.  This is the ONLY completely natural sweetener out there that is also calorie free.  It is taken from the leaves of a plant and it is tremendously sweet so you need much less of it than sugar.  I was blessed to win a bunch of NuNaturals products through a giveaway from Renee of My Kitchen Adventures (thank you so much Renee!), and hope to do a review soon with comparisons to other sugar substitutes.  NuNaturals products are by far the best I’ve tried and I highly recommend them.

Since I’m not counting calories on the 17 Day Diet, I didn’t calculate them for this cocoa when we drank it, but just going from the labels on the milk and the cocoa (the only things that have calories in the recipe), I can tell you that there is 120 calories, 1 g fat,  22 g carbohydrates, and 2 grams fiber. Not to shabby, and I think you’ll agree that this hot cocoa is totally worth every healthy & delicious calorie.

Skinny Dark Hot Cocoa

1 tablespoon cocoa powder
1 tablespoon Dutch process cocoa powder
2 packets NuNaturals NuStevia
Pinch fleur de sel or kosher salt
1 ¼ cups nonfat milk
½ teaspoon pure vanilla extract

Whisk together the cocoa powders, stevia powder, and salt in a small saucepan. Add half the milk and whisk vigorously until the cocoa powder is dissolved. Turn the heat to medium, and whisk in the remaining milk. Heat until the hot cocoa starts to steam (do not boil), and pour into a mug.  Enjoy!

For a caramel hot cocoa: stir in ¼ teaspoon caramel extract along with the vanilla at the end.

Serves 1

P.S. Happy leap day!  I know this is crazy, but this is the first year I’ve actually been aware that it’s a leap year.  How did I miss the other seven I lived through?  Queen Oblivious here! I know I’m getting random here but did anyone else used to watch the show Quantum Leap?  I honestly can’t remember a thing about it except I think I liked it (I was pretty young so maybe it was too mature for me), and I always associated the name with leap year.  Did it even have anything to do with a leap year?  OK, seriously, I’ll shut up now.

Operaton Postcard for Beverly, and Dark Chocolate-Raspberry Cupcake Bites


Remember The Postcard Project?  Yeah, I sort of lost steam on it and forgot about it myself!

OK, this makes me SUPER excited.  I’m so on this!  I already sent my postcard, and I told Margaret I’d spread the word  I hope many you will join me and that Mrs. Beverly will be able to mark every single state (and maybe even a few overseas countries) on that map!  I can just imagine her anticipation as the cards roll in each day and seeing her marking the map and later making a scrapbook with the cards.  I confirmed her address is a nursing home through a Google search, so just imagine the happiness all these cards will bring to this lady on her 90th birthday!

In the spirit of celebration, I thought I’d share this cupcake bite creation I made using leftovers from a Dark Chocolate Raspberry Cake (the cake domes I sliced off, plus the leftover frosting).  If you like the combination of chocolate and raspberries, you’re going to love these!

To make them, just use the original cupcake bites instructions, using the cake and frosting recipe from my Dark Chocolate Raspberry Cake.  Or, if you make the cake and want to use the leftovers for these, here is the “recipe.”

Dark Chocolate-Raspberry Cupcake Bites

Cake domes leftover from a Dark Chocolate Cake
1-2 tablespoons leftover Raspberry Buttercream
4 ounces (2 rectangles) chocolate candy coating/almond bark
4 ounces pink candy melts
sprinkles for decoration

Crumble up the cake tops in a bowl with your hands, or in a food processor. Using your hands, mush in the frosting until well mixed. Roll the mixture into balls (I got ten but you might get more if you had really high domes on your cake) and place on a plate. Cover with plastic wrap and refrigerate for two hours or overnight.

Melt the chocolate candy coating according to package directions, being careful not to overheat it. Spoon the melted coating into miniature peanut butter cup molds, filling about 1/3 full. As you fill each one, press a cake ball down into the chocolate until it comes up the sides to the top of the mold. Once the mold is full or you’ve done all the balls, place in the freezer while you melt the pink candy coating.

Melt the pink candy coating according to package directions. Add a little oil or shortening if your chocolate becomes too thick (Wilton is especially prone to this). Pop the cupcake bites out of the mold onto foil or waxed paper. Pick up one at a time by the chocolate bottoms and dip upside down into the pink candy coating, making sure it covers the whole cake ball. Gently shake off excess and set right-side-up on the foil/waxed paper. Immediately sprinkle with sprinkles and continue to dip and sprinkle until all cupcake bites are finished. Serve at room temperature. You don’t need to refrigerate unless they will be outside the fridge for more than three days.

Mocha-Frosted Kahlua Brownies


Happy Valentine’s Day!  Do you have any special plans?  Dennis and I are finishing up the first cycle in the 17 Day Diet, so our celebration is going to include some very healthy and delicious food, and NO SUGAR.  I know, right?  Yes, this is still Veronica’s Cornucopia, and yes, I just said I will not be eating sugar on Valentine’s Day, nor serving it to my Valentine.  What is the world coming to? ;)

Well, despite us not partaking of any sugar (don’t worry, I do have a stevia-sweetened chocolate treat planned, so we will not be totally deprived), I do have a fabulous sugary treat to share today.  I know I’m sharing it a bit late for you to actually make it for the holiday, but I can’t just post another soup recipe–that is just way too unromantic, right?  Nope, it’s gotta be chocolate today.

I’ve been making this recipe for years, and in fact, have posted it on my blog before along with two other brownie recipes, but despite the number of times I’ve made it, I never had a decent picture until now.  (The brownies always disappeared before I got a chance to give them a photo shoot!)  And now that I do, I’m giving these brownies the individual post they deserve.

This is my own creation that I first started making when my sister opened her shop in 2008.  I used to sell my baked goods there in the beginning and these babies were best sellers.  It didn’t matter what other delicious treats I brought along with them, these always went first.  They are oh-so mocha-licious, over-the-top, decadent, rich treats.  Apparently you don’t even have to like coffee to love these, because my husband, who shivers at the mention of coffee, goes crazy for these brownies.  But if you do like coffee, and chocolate, and like them together, oh boy you gotta make these. Just do it.

Mocha-Frosted Kahlua Brownies

Brownies
1 box fudge brownie mix
2 eggs
1 stick (1/2 cup) butter, melted
1/4 cup Kahlua (I make my own with this recipe)

Frosting
2 tablespoons Kahlua
1 tablespoon instant coffee crystals
1 cup semi-sweet chocolate chips
2 sticks (1 cup) butter, softened

Ganache
1/4 cup heavy cream
2 ounces semisweet chocolate chips

Make the brownies: mix up everything, spread in a 9×13 pan (grease the bottom only) and bake at 350 for however long the box says. Don’t overbake unless you like dry brownies. Cool COMPLETELY before frosting.

Make the frosting: Microwave the Kahlua for 30 seconds or until boiling (I use a glass 1-cup measuring cup and fill it 1/2 way to the 1/4 cup line). Stir in the instant coffee until dissolved, and place in the freezer to cool. Melt the chocolate in the microwave for 1 minute, stir and then give it another 30 seconds, stirring again. It should be melted but if not, continue this cycle in 30 second intervals.  Be careful not to overheat it.  Once smooth, set aside to cool. Cream the butter then beat in the cooled chocolate. Last, add the coffee mixture and beat it until everything is incorporated, scraping down sides of bowl. Spread over the cooled brownies.

Make the ganache: place the chocolate and heavy cream in a small microwave-safe bowl. Heat for 1 minute at 50% power and stir. The mixture should turn dark and shiny but you will probably need to return the bowl to the microwave for another 5-10 seconds or more to get it fully melted together. Be careful not to overheat, just warm it enough to get the chocolate and cream to emulsify completely.  If your mixture is warm to the touch, allow to cool to room temperature and then drizzle over the top of the brownies before cutting and serving.

White Trash


I drafted this post on December 26th, 2009. It is the oldest draft in my collection, so I’m pretty excited to finally have a fairly decent photo of it so I can share the recipe with you!

On my wedding day eleven years ago, my new Grandmother (this one) gifted me with her church’s fundraiser cookbook*, which included many recipes from her and other members of my new family.  I treasure it!  I love spiral-bound recipe books like these because they are filled with tried-and-true recipes that real people use–simple, unpretentious, and delicious.

Love that it has a cornucopia on it--perfect for my blog! :)

Take this one, for example. I had to giggle when I read the name “White Trash.” I really like the name because it’s funny and does accurately describe the appearance, but it is also known in classier circles as “Christmas Crunch.” I don’t care what you call it, it’s salty and sweet and addictively-delicious!

So this is the last recipe I’ll be sharing before the holiday, and I think you’ll find it a perfect treat to whip up if you need a last-second snack or gift.  Dennis and I are heading to Abilene as soon as we get out of church to spend Christmas** with his family, and will be back some time on Monday so I won’t be posting anything else until Tuesday at the earliest.

White Trash

3 cups Rice Chex Cereal
3 cups Cheerios cereal
2 cups salted, roasted peanuts
2 cups pretzel sticks, broken in half
1 lb. white chocolate or vanilla almond bark*
1 (12 oz) bag M&M’s in seasonal colors

Mix all ingredients except chocolate or almond bark in a large bowl. Melt chocolate or almond bark as package directs; pour over mixture, mixing to coat well. Spread out onto waxed paper to dry. Break into chunks and store in airtight containers or Ziploc bags. Saves well for several weeks.

*1 lb. of almond bark is 8 rectangles.
