Italian Grilled Cheese

I love quick, easy meals like sandwiches in the summer.  Usually cold, but this is one grilled cheese I really enjoy when the temps start to rise.  I think because it reminds me of bruschetta, which reminds me of summer.  Probably because that’s when fresh basil abounds!  This is a very nice change from the traditional grilled cheese, and I love the flavor of the basil and melty mozarella and tomato all together…almost like a Margherita pizza but in the form of a quick sandwich. Can’t beat that.  Bring on the melty bruschetta/pizza sammich.

Italian Grilled Cheese

8 fresh basil leaves
8 thin tomato slices
4 slices provolone or mozzarella cheese
4 slices Italian bread ( 1/4″ thick)
2 tablespoons prepared Italian salad dressing

Layer the basil leaves, tomato slices and provolone cheese on two slices of bread. Top with remaining bread. Brush outsides of sandwiches with salad dressing. Grill, uncovered, over medium heat for 3-4 minutes on each side or until cheese is melted. Makes 2 sandwiches.

Blackened Chicken with Roasted Garlic Alfredo

Dennis is a huge fan of blackened meat.  And by blackened, I don’t meant burnt (that would be me that likes burnt meat), I mean meat that’s been rubbed with spicy blackening seasoning.  So when I ran across this recipe, I knew it would be perfect for Father’s Day.  It was perfectly suited for him, is impressive, but simple to prepare, which is pretty much a requirement for all the recipes I make these days.  It was incredibly delicious, and I would make it again, and again, and again.

Blackened Chicken with Roasted Garlic Alfredo

2 boneless skinless chicken breasts
Olive oil
1 tablespoon blackening seasoning
1 (10 oz) container Buitoni Light Alfredo sauce
1 tablespoon roasted garlic
8 oz bowtie pasta, cooked to al dente & drained

Drizzle olive oil over chicken breasts to lightly coat. Sprinkle blackening seasoning liberally over both sides of the chicken. Heat skillet on medium-high and cook chicken 3 minutes on each side. While chicken is cooking, heat Alfredo sauce and roasted garlic. Add pasta and toss; divide between two dishes. Slice chicken and place on top of pasta. Sprinkle with Parmesan cheese, if desired.

Veronica’s notes: In a pinch, you can sprinkle in some garlic powder to taste instead of the roasted garlic.  Also, Bertolli’s jarred light alfredo works great for this recipe if you can’t find the fresh stuff.

Sausage Minestrone


I’ve been making the most amazing soups this winter.  My secret? I finally gave up following recipes! I never thought I could cook without a recipe, as I’ve never been what I think of as a “natural cook” – someone who can just keep adding things to a dish or pot until it tastes amazing. But I decided to give it a shot, and have surprised myself with the results.

Sadly, a lot of the delicious things I’ve made, I didn’t measure anything and didn’t take notes, so I can’t share recipes or even make them exactly the same way again.  But this one turned out so good that I immediately wrote down exactly how I made it so I could duplicate and share it.  I’ve made it twice in the past month – we love it so much! It’s also quite nutritious and low in fat, which is a big bonus in my book, as many of my favorite meals are huge calorie bombs. Not this one. Enjoy the flavor, guilt-free. :)

Sausage Minestrone

1 (8 oz) package baby portabella (“bella”) mushrooms, sliced
1 (20 oz) package Italian turkey sausage, casings removed
8 chicken bouillon cubes*
8 cups water
1 (15-16 oz) can white cannellini beans
1 (15-16 oz) can dark red kidney beans
2 (14.5 oz) cans diced tomatoes with basil, garlic & oregano, undrained
2-3 carrots, peeled and chopped
1 large zucchini, cut in half & sliced
1 large onion, diced
3 cloves garlic, minced
2 bay leaves
2 cups kale, hard stems removed and chopped into small pieces

Cook the mushrooms in olive oil in a skillet over medium heat until they are cooked down and soft and a darker color. Scrape into a stock pot. In the same skillet, brown the turkey sausage, breaking it up as it cooks to make crumbles. Once cooked, add to the pot. Add the remaining ingredients except for the kale, and bring to a boil over high head. Reduce heat and simmer until vegetables are tender, 15-30 minutes.  Add kale and cook another five minutes.

*Veronica’s notes: you want the smaller size bouillon cubes, the ones that need only one cup water each for broth. If using the bigger ones that need two cups, use only 4 cubes. You can use 8 cups chicken broth instead, omitting the water from the recipe, and add salt to taste.  The second time I made this, I added in 3 stalks of celery and a pound of fresh green beans. Feel free to add what you like, and just add more seasoning to taste, if necessary.

Easy White Chicken Chili


Nana D brought us a batch of her White Chicken Chili last winter when we were sleep-deprived new parents, and let me tell you, not having to cook and eating this chili was a big slice of heaven.  It’s now one of my favorite winter meals, it’s just so ridiculously over-the-top delicious.  The big bonus is that it’s so easy to make – the only prepwork is opening cans and chopping an onion. Can’t beat that!

Easy White Chicken Chili

3 (10 oz) cans chicken chunks
1 (15 1/2 oz.) can great Northern beans, drained and rinsed
1 (15 oz) can cannellini beans, drained and rinsed
1 (15 oz can chickpeas, drained and rinsed
1 (15 oz.) can corn, drained
2 (4 oz.) cans chopped green chilies, undrained
1 medium onion, chopped
2 teaspoons garlic powder
2 cups chicken broth
1 teaspoon salt
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup sour cream
1 cup Monterrey Jack cheese, shredded
1/2 C. whipping cream
1/4 C. Pepper Jack cheese, shredded
Cilantro for garnish (optional)

In large soup pot, combine all ingredients except sour cream, whipping cream and cheeses. Bring to a boil over medium high. Reduce heat to simmer and cook for 30-40 minutes. Remove from heat and stir in sour cream, whipping cream and cheeses. Ladle into bowls and garnish with cilantro, if desired.

Serves 6

*Veronica’s notes: I use bouillon cubes plus water for the broth, which adds a little more flavor. Donna’s recipe called for 2 teaspoons chili powder, which I omitted to keep the color white (hers has an orange hue), and the flavor didn’t suffer, but it’s really good with the chili powder too if you’d like to add it. If you like things spicy like we do, you can use all Pepper Jack cheese, and half an 8 oz block is plenty, so that you can have enough to make another batch, or a double batch. :)

Last-Minute Lasagna


This isn’t the greatest lasagna of all time, but it’s really good (quality does depend on the products you use), and it’s really FAST!  And that makes it a winner in my book. I served this to company (Nana Donna, AKA Momma Donna), and she said she had no idea it wasn’t real lasagna and she really enjoyed it a lot! So if you ever need a meal in a hurry, this one’s a great one to try.

Last-Minute Lasagna

1 (24-26 oz) jar pasta sauce
2 (16 oz) containers frozen large, cheese or beef ravioli
1 (10 oz) box frozen chopped spinach, thawed and excess water squeezed dry
8 oz mozzarella, shredded
1/2 cup (2 oz) grated Parmesan
Fresh basil or parsley for garnish, if desired

Heat oven to 350° F.  Coat a 9 x 13 baking dish with cooking spray, spread 1/3 of sauce to cover the bottom of dish. Cover with half of the ravioli, half of the cheeses, all of spinach, 1/3 of the sauce. Repeat with another layer of ravioli (not all the ravioli may be needed), spread with remaining sauce and top with remaining cheese. Cover with foil and bake for 30-40 minutes. Uncover and bake until bubbly, 5 to 10 minutes more. Let sit for 10 minutes before serving.

Peanut Butter Cookie Dough Baked Oatmeal

I like keeping things simple and easy at meal time, especially breakfast, so when I discovered how much Joshua enjoys baked oatmeal, I decided to make more of it.  A pan lasts several days and it’s so nice to be able to just take out a square and heat it in the microwave. Bam. Breakfast is done. He takes care of the rest.

I made this in an attempt to make a baked oatmeal that really would be reminiscent of cookie dough, since the pumpkin didn’t really have that feel to me (granted, I may have over baked it a tad, as I tend to do a lot these days). And wow, you guys, I nailed it.  *pats self on shoulder* ;) This stuff is warm and gooey and melty and soft and creamy and really, a lot like a thick, warm cookie dough. Dennis even ate it for dessert after dinner one day, with some whipped cream on top. It’s that good. And low in sugar, or sugar-free if you want to leave the chocolate chips out. You would never guess, it’s just so good, but feel free to use sugar if you prefer. This one is definitely worth a try.

Peanut Butter Cookie Dough Oatmeal

2 cups quick-cooking oats
4 packets stevia*
½ teaspoon salt
1/3 cup peanut butter
2/3 cup milk
1 (4 oz) snack cup of unsweetened applesauce (heaping 1/3 cup)
1 egg
2 tablespoons oil or melted butter
2 teaspoons vanilla
½ cup chocolate chips, plus more for top if desired

Mix all ingredients together well until blended. Pour batter into an 8×8 pan sprayed with oil. Bake at 350F for 30 minutes.

*If you want to use sugar, I’d recommend brown sugar for a more cookie dough-like flavor. I’m not certain on the amount, but I’d try 1/3 cup and add more to your taste if needed.

I have to show you guys what this looks like with the flash – the photo is cheaper-looking but this really shows off how cookie dough-like it is. It’s soooo soft and I just couldn’t capture that gooey softness as well with natural light. Honestly, sometimes the flash is the only way to show the true colors & textures. Amateur photographer problems. :)

Red Raspberry Jam

It all started when I bought a gazillion pints of raspberries because they were unseasonably on sale for $1 each at that time.

After we ate half a gazillion, the rest were about to go bad, so I decided to try my hand at homemade jam.

It’s something I’ve never done but always wanted to.  Let me tell you, it couldn’t be easier! You don’t even need to go out and buy pectin, at least not for this recipe.  That’s one reason I never made it, it just annoyed me that I needed to go buy something that was already in fruit anyway. This method uses a method of cooking the sugar first to gel the jam, rather than an abundance of pectin.  Cool.

If you’ve never had homemade jam, there is just no comparison to store bought. So good.  You might not be able to eat store bought after making your own!  And if you can bear to part with some, it makes great gifts too.

Red Raspberry Jam

2 lbs fresh raspberries
3 1/3 cups granulated sugar
2 tablespoons lemon juice
1 tablespoon butter

Combine all ingredients in a large saucepan and bring to a boil over high heat, stirring to combine and break down the berries. I mash them with my spoon or a potato masher to break them down and the jam still has a pleasantly chunky consistency when finished. Cook until jam reaches 221 degrees, or until a small amount gels on a plate when placed in the freezer for 2 minutes. Pour into a 4-cup glass measure and pour into sterilized & prepared jars. Screw on lids and allow to sit until sealed.  Jars may be stored in refrigerator for up to a month.  For instructions on how to can the jam to keep it at room temperature for up to a year, click the recipe link below.

Smoky Baked Beans

Summertime is packed with barbecues and picnics, and I like to have an arsenal of crowd-pleasing recipes to bring.  With Independence Day approaching, I thought I’d share one of my new favorites!  I like to bring something that’s either OK at room temperature (because it’s hard to keep cold dishes cold), or something that can hang out in the crock pot without getting overcooked.  Baked beans go great with any outdoor summer meal and these were a hit at our Mother’s Day picnic. I would definitely make these again, even as a summer meal in itself!

Smoky Baked Beans

1 lb. bulk spicy pork sausage (I used Jimmy Dean)
1 medium onion, chopped
1 (31 oz) can pork and beans
1 (16 oz) can kidney beans
1 (16 oz) can black beans
1 (16 oz) can butter beans
1 (16 oz) can white beans (such as Navy, Northern or Canellini)
1 (10 oz) can tomatoes with green chiles (Rotel)
1/2 cup hickory-smoke flavored BBQ sauce
1/2 cup ketchup
1/2 cup packed brown sugar
1 teaspoon ground mustard
1 teaspoon steak seasoning
1 teaspoon liquid smoke

Brown sausage with onion in large skillet. Drain fat. Place in large slow cooker, add remaining ingredients and stir well. Cook on low for 4-8 hours.

Tangy Pasta Salad

This was the first recipe I ever pinned from Gina’s blog, At Home My Way, and that was years ago.  I’m so glad I finally got around to making it because it’s mega delicious, easy, and perfect for summer potlucks!  I’ve already made it for two of them in as many weeks and might have traded a few meals to enjoy an extra big bowl of it. LOL!  It’s really good stuff – not the typical dressing with oil or mayo (which means it won’t go bad in the heat!), but nice and tangy and fresh.  Love it!

Tangy Pasta Salad

1 (16 oz) package tricolor spiral pasta
1 medium red onion, diced
2 medium tomatoes, diced
1 medium cucumber, seeded and diced
1 medium green pepper (or red or yellow or orange, or some of each!)
1/2 red or white (sweet) onion, finely sliced and the rings cut into 1/4ths

Dressing
1 cup granulated sugar
1/2 cup white or apple cider vinegar
1 tablespoon ground mustard
1 teaspoon salt
1 teaspoon garlic powder

Cook the pasta according to package instructions to al dente. Drain and rinse thoroughly with cold water until the pasta is cool to the touch. Add to a large bowl along with remaining salad ingredients.

In a small saucepan, mix together the sugar, ground mustard, salt, and garlic powder. Mix in the vinegar and cook over medium heat until sugar is dissolved, 2-5 minutes. Pour over salad and toss to coat. Cover and refrigerate for 2-6 hours; serve cold with a slotted spoon.

Veronica’s notes: you can use a smaller package of pasta – I used both 12 and 14 oz packages and both salads turned out fine. Unfortunately the leftovers aren’t great so this is best eaten between 2-6 hours after making it. The pasta is fine the next day, but something happens to the vegetables and they just aren’t’ as good – the salt probably draws a lot of water out of them, and they just don’t seem as fresh or tasty.

Neiman Marcus Dip

I was perusing Minda’s Cooking after a long hiatus and I pinned everything I saw and then made it within a week.  OK, so it was three things, but that’s kind of epic for me. I pin tons of things (seriously, I’m almost at 8,000 pins), but rarely make them, let alone all at once. Minda’s blog was speaking my language, though.  First it was the  Frito Salad. Then it was this dip.  Then it was the Crockpot Chicken & Stuffing. Bring on the easy-to-make comfort food.

OK so we’ve already established that dip is my thing.  Dip is like majorly my thing.  If dip were a man, I would marry him and then eat all our dip babies. OK, maybe that’s going a little too far, but not by much.  And this dip is so, so good.  Totally meets my dip standards because it’s fat, plus more fat, plus some more x 2, with onions, which means it’s delicious. Can’t go wrong with quadruple fat plus onions.

All kidding aside, this dip is some serious goodness.  It’s creamy, crunchety, bacony goodness.  Make it, and you’ll be a superstar at your next potluck, game day, or to yourself as you spend some quality alone-time with it.

Neiman Marcus Dip

5-6 green onions, sliced (both white and green parts)
1 (8 oz) package cheddar cheese, shredded
1 (3 oz) package real bacon bits
1/2 cup slivered or sliced almonds, toasted & cooled completely
1 1/2 cups mayonnaise

Stir all ingredients together well in a mixing bowl.  Cover and refrigerate until ready to serve.
