Thankful Thursday #99: reunited at last

At last…

My looooove has come along.

WAIT! Stop the music.  Before I continue with my post, I have to right a wrong I did on my last Thankful Thursday. There probably were lots of omissions on that post because I with such generous people in my life, but the one I realized was that I didn’t include was Debbi‘s cookies, which she sent to me just because.

They were so good I didn’t get a picture of them, which is why I forgot to include them.  This photo, which I swiped from a friend’s Tumblr post, is the only proof her Snickerdoodles and Wookie Cookies were ever in my possession.  These were the best snickerdoodles I ever had, I just loved how fat and fluffy they were.  Thank you so much Debbi, you are a gem!

OK, back to your regularly scheduled programming…

I’m so dramatic with my title, you probably think I’ve been reconnected with a long-lost friend.  Nope, just my bestest sister-friend!  Danielle and I are now working together at the REC again!  We both started around the same time in the spring of 2004 and she left about a year later.  We were quite the pair, constantly being “shushed” when we sat together on the floor, because WE CAN’T CONTROL THE VOLUME OF OUR VOICES !  Or our laughter.  And ever since that first Halloween we worked together, management has continued to remind everyone to wear “work appropriate” costumes for Halloween.  Probably while visions of a certain witch and go-go girl dance in their heads.  Oops.

That pic was taken by a co-worker that came home with us after work for a photo shoot, so we really did, yes we did, go to work looking like that.

I do have to say our skirts were a bit on the short side.  And the tight side.  Wow.  But at least I had a cape to cover my butt, Danielle.  ;)

I do remember burning with embarrassment from the moment I stepped out of the car until we got back into it (we used to car pool), so I guess I did have some sense when it came to what was appropriate for an office environment, I just didn’t have the sense to apply it. lol

I don’t have anything else to say except I’m so thankful to be working with my sister again!  Though we live in the same city, we don’t spend much time together like we used to because we’re both so busy, and it’s nice to have some time we can chat face-to-face, even if it is on short breaks.  I’ll take it!

I don’t care if it’s lame, I’m giddy with excitement to be working with Danielle again. <3  Let’s see if we can stay out of trouble this time!

Barley with Butternut Squash, Apple & Onion

This is one of the “meals” (it’s really a side dish but I like to eat it as a meal) I’ve been making for years and usually resurrect come fall/winter.  My family absolutely loves it too, even my little nephew (or at least he did at 4 years old, the last time he ate it)!  I appreciate delicious vegetarian meals that satisfy me and this one fits the bill fo sho. The combination of the creamy squash, chewy barley, crisp red pepper & apple, and the contrasting savories and sweetness–it’s all just magic to me.  And I guess if a four year old boy will relish something that only contains unrecognizable healthy ingredients, it is pretty magical.

Barley with Butternut Squash, Apple & Onion

3/4 teaspoon salt, divided
1/2 cup uncooked barley
1 tablespoon olive oil
2 cups butternut squash, peeled & diced
1 cup onion, chopped
1/2 cup sweet red pepper, diced
1 medium apple, peeled, cored, diced
1 1/2 teaspoons garlic, minced
3/4 teaspoon dried thyme
1/4 teaspoon black pepper
1/3 cup fat-free chicken or vegetable broth

Bring 3 cups of water and 1/2 teaspoon of the salt to a boil in a medium saucepan; add barley. Cover saucepan and simmer barley until tender, about 30 to 35 minutes; drain.

Meanwhile, heat oil in a large nonstick skillet over medium-high heat; add squash and cook, stirring often, until it’s starting to soften–about five minutes. Add the onion and red pepper and cook for an additional 3 minutes.

Stir in apple, garlic, thyme, black pepper and remaining 1/4 teaspoon of salt. Cook, stirring, until apple is almost tender, about 2 minutes; stir in broth, scraping bottom of skillet with a wooden spoon to loosen any browned bits. Stir in cooked barley; toss over low heat to mix and coat. Remove from heat and serve.

Serves 4, about 1 cup per serving.

Per serving: 192 calories; 4.2 g fat; 0 g cholesterol; 37 g carbohydrate; 8 g fiber; 5 g protein; 5 Points Plus

Thankful Thursday # 98: STUFF

Have you ever watched George Carlin’s skit on “Stuff?”  If not, it’s pretty funny if you have 5 minutes to spare:

So yeah, that’s what I’m thankful for today. STUFF.  That I have too much stuff!  Sure, it’s a problem, but it beats the alternative…not enough stuff!

So I’ve gotten a lot of great stuff lately. First, stuff in the mail. I love stuff in the mail!

I won three beautiful jars of Bonne Maman preserves from Nutmeg Nanny in November. The first thing I did with the strawberry was slather it on a cornmeal pancake. Thank you Brandy, we love these preserves!

I got a lot of cookies in the mail last month from the cookie swap.  I swapped with four people but received cookies from six because Allison and Eileen asked if they could send me some cookies too.  Guess what I said? :)

The plate has cookies on it from my first four boxes received from Marcia, Jolie, Eileen & Linda. My favorites were the Marbled Cream Cheese Pound Cake from Marcia, Hazlenut Crinkles from Jolie (bottom left on the plate), the Brown Butter Toffee Blondies from Eileen (top middle), the molasses cookies from Jolie (middle right) and the pumpkin chocolate chip cookies from Linda (bottom right).

Look at the adorable packaging Allison and Katie sent their cookies in!  A “cookie radio” tin and a gingerbread house!

Katie sent White Chocolate Peppermint Sugar Cookies (swoon–my favorite of all the cookies!) and Allison sent some wonderful Lemon Burst Cookies.  I got them late because mail delivery was stopped to our area due to loose dogs (such a bummer) and it took me a while to figure it out, but even after a week in the mail these suckers were incredible and still so moist. Thank you guys, all of you, for the wonderful treats!

After the cookies started rolling in, out of the blue, I got this huge package from California. I love surprise packages!  I opened it up and still had no idea who it was from when I saw what was inside.  I really was not expecting a big box of yumminess.  I read the card and couldn’t make out the name very well, then I looked at the address again, knowing it seemed familiar and everything finally clicked together. A reader named Emma bid on a ton of stuff for Suzie’s bake sale fundraiser and one of the many thing she won was from me (almond fudge cookies) so she had my address from that and sneakily used it to mail me some of her “favorite things.”  Wow, this woman is beyond generous.  Thank you, Emma!

So much goodness! A huge sack of sliced almonds (yay for more almond fudge cookies!), a big sack of dried young coconut (wow so good), seasonings, some major fun dark chocolate (I didn’t even know there were 70% dark chocolate Kit Kats did you?), sipping chocolate, granola, honey mints, coconut sugar, and even some dog treats for Jessie!

I also got some Japanese treats from my friends Kriss & Nicole who moved their family to Japan several months ago.  Kriss used to share these with me when we worked together because his sister always mailed him snacks, so he knew my favorites were the Senbe and included those too. They’re the rice cakes on top–they’re sweet and salty and so good.  Thanks Kriss and Nicole!

I won a giveaway from The Squishy Monster and got a ton of Newman products. I had no idea they even had this large a line!  All of this was so good, though I did give quite a bit of it to my Dad b/c they he loves old-fashioned cookies like gingersnaps and hermits. Thank you Angie! And someone else will be thanking you too soon because I sent a little bit to a mutual friend. :)

And let’s not forget Xena, my warrior princess.  <3

I also got some gifts last month and I’m not going to share all of them since I’m already overwhelmed by stuff with this post, but here’s a little bit.  I got this angel wrap with matching socks, which is like a robe but way cooler, from my sister-in-law, Joan, at our family Christmas party (we get gifts by drawing numbers, I happened to get her gift).

Joan also drew my name for our personal family Christmas gift exchange (we draw names rather than giving gifts to everyone to save money since we’re always broke-haha).  I’ve been wanting a doughnut pan foreeeeevers and Joan got me a set of TWO! One regular, one that makes twisted long johns-oh yeah!

I had to make the long johns immediately because I’m going sugar-free for a while. Aren’t they cool?!

And here’s something I just received yesterday from my friend Erika, who is now a skinny hard core mail carrier:

These are pretty enough to serve dessert in, and bonus: built in portion control. Love it.

So yes, stuff is good, but when you have too much stuff, like I do right now, getting rid of it/giving it away is even better.  So I’m going to do a house purge! In 2011, I purged 111 things from my house in January, then purged 112 things in 2012.  This year, the magic number is 113 things. It sounds like a lot, but this is going to be a cinch. I think I have that many magazines alone to get rid of!  I’ll report back when the house has been exorcised of unnecessary stuff.

Shredded Chicken with Noodles

I made this two years ago, it’s about time I shared it!  This is basically chicken noodle soup but with sauce instead of broth. As I’m all about chicken noodle soup, especially with homemade egg noodles, I love it with or without the broth (forget that my “sauce” looks more like broth, I obviously messed up by not thickening it enough, but you’re not going to, right?), and this is one of those hot comforting meals that seem essential during cold winter months.

Shredded Chicken with Noodles

1 whole cut up fryer chicken
2 whole carrots, diced
2 stalks celery, diced
½ whole medium onion, diced
1 teaspoon salt
½ teaspoons turmeric
¼ teaspoons white pepper (more to taste) (I used black)
¼ teaspoons ground thyme
2 teaspoons parsley flakes
16 ounces, weight frozen “homemade” Egg Noodles or same amount dried large egg noodles
3 tablespoons all-purpose flour
1. Cover chicken in 4 quarts water. Bring to a boil, then reduce heat to low. Simmer for 30 minutes.
2. Remove chicken from pot with a slotted spoon. With two forks, remove as much meat from the bones as you can, slightly shredding meat in the process. Return bones to broth and simmer on low, covered, for 45 minutes.
3. Remove bones from broth with a slotted spoon, making sure to get any small bones that might have detached. Add the carrots and celery and onions to the pot, followed by the herbs and spices. Stir to combine and simmer for ten minutes to meld flavors.
4. Increase heat and add egg noodles and chicken. Cook for 8 to 10 minutes.
5. Mix flour and a little water. Stir until smooth. Pour into soup, stir to combine, and simmer for another 5 minutes, or until broth thickens a bit. Test and adjust seasonings as needed.

Thankful Thursday #97: a fresh start

Our Memory Jar, filled with paper memories from 2012. The pictures included in this post are all things found within the jar.

Despite not doing a recipes “best of” to recap for 2012, I am a little introspective on the year.  In one way, it was a hard year. Really hard.  In all other ways, it was great.  When I think back on this year, all I feel is happy, so I’m thankful for that.  But I’m also thankful for a fresh start.

Regular readers know that 2012 was the year we really tried to have a baby–and I mean gave it our all.  And did not succeed.  We finally got ourselves checked out after eight years of casually trying and nearly a year of gung-ho trying (you know, with all the charting and timing and hooplah), and the urologist said it is “very unlikely” that we will ever have a baby together naturally.  That was really tough to hear.

Right now our future is uncertain as far as children are concerned.  We are doing what we can, including praying and taking natural supplements (there’s nothing doctors can do to help besides IVF, which we are not interested in), but our window of opportunity is fairly well shut.  Haus is on the older side to become a first-time Dad (45) and knowing what it’s like for a child to be raised by older parents (my Dad was a surprise, born to my grandparents when they were in their late 40s) and how it can make them constantly afraid that their parents will die while they are still growing up, I feel it’s not right to keep trying.  And yet it’s also something hard for me to give up.

I have been thinking about fostering to adopt for almost as long as we’ve been trying, and while this is something Dennis and I will have to decided between us, it is definitely one avenue of opportunity for us to raise a child if we do not have one of our own.  I am finding it terribly hard to totally give up on the hope of having one of our own right now, so I don’t think 2013 will be the year for us to go into the foster program.  2013 is more likely going to be a year of transition into parenthood, Lord willing, one way or another.

Anyway, besides the trial of trying to conceive and month after month of disappointment, and the weight gain brought on by my emotional eating, this has been a wonderful year.   While the photos in this post are showing our paper memories, there were many more wonderful memories made that you won’t  find on paper.  Lots of laughter, lots of hugs and kisses, lots of celebrations, long walks & talks, lots of love. We are happy, we are healthy, and I am thankful.

While I do yearn for children, I’m also desperately thankful for the “alone time” Dennis and I have had with each other for fourteen years.  I know being a parent is really hard, and we are so totally spoiled without them, and I do count that as a blessing.  I’m sure I will miss the freedom I have now if I ever lose it, so I do try to appreciate it while it is mine.

That said, I’m dreaming of what 2013 will bring.  While I’m hoping and praying that it includes a child, something that I do have control over is my diet and I’m getting that back under control.  No more, “This baby stuff is so harrrrrrd, whiney whine whine whine,” while shoveling in chips and sour cream dips, and squirting pastry bags full of leftover icing in my mouth. OK, so I don’t really whine like that, and don’t really squirt pastry bags full of icing into my mouth (though I have been known to do so in the past), but you get the idea.  I’m not going to milk the baby stress excuse to eat whatever I want in huge quantities.  Not any more.  I’m ready to “give birth” to the food baby I’ve created from overeating.  Especially since he’s decided to take up precious pants space and I really don’t want to buy bigger pants (I’ve already done that too many times).  Food baby be gone!

Tropical Traditions sent me a jar of their Gold Label and I’m really happy with it.  So far the only coconut oil I’ve met that I haven’t adored is the refined kind, which doesn’t have the wonderful flavor of the virgin oil, but this oil did stand out from my other favorites.  As soon as I got my jar I dug in with a spoon to try it (I often eat a spoonful for a treat–coconut oil is like candy to me, without the addictive quality). It had the pure coconut flavor I expected but for me the biggest difference between it and other virgin coconut oils was the ultra satiny-smooth texture it had in its solid state before it melted in my mouth.  Another favorite of mine, Barlean’s, has a great flavor but it almost feels like it has coconut pulp in it, it definitely has a fuller texture, which I personally don’t like as much.  I could definitely tell from the first bite that Tropical Traditions is premium quality and I would recommend it to anyone who would like to try coconut oil.

Cranberry Bliss Cookies & Cookie Swap Recap

Happy new year!  While most food bloggers are recapping 2012 with their top recipes, I’m totally disorganized and sharing an unseasonal recipe instead, weeks after I’d intended to.  Hey, give me a break, I still don’t have my head on straight after the hectic holiday season and still have one holiday party to go to before I’ll feel truly like I can settle back into a normal routine.

It’s been a while since I shared a recipe, and I wanted to share the yummy cookie recipe I used for  my cookie swap. I know most people are probably drinking green smoothies and training for marathons to attain lofty new year’s resolutions, but I’m going to share this cookie recipe anyway because I really don’t want to wait until next December to do it.  You can save it for next year, but if you have some dried cranberries left over from your holiday baking, why not use them up in these cookies?  I promise those you share them with won’t complain about cookie season being over.  But they might blame you for not making their goal weight loss this week.  :)

This recipe is for a super ginormous batch that makes about 9 dozen cookies, which is great if you are planning on sharing lots of cookies.  If you’d like a more moderate single batch (wuss), you can refer to That Skinny Chick Can Bake‘s recipe, which is what I used to make my ginormous recipe.

Cranberry Bliss Cookies (large batch)

*Note: the pecans need to be toasted so do this step first to avoid frustration.

1 ½ cups (3 sticks / 12 oz) unsalted butter, room temperature
1 ½ cups (10 ¼ oz) vegetable shortening
2 ¼ cups (1 lb) sugar
2 cups (1 lb) brown sugar, packed
2 tablespoons vanilla extract
1 ½ teaspoons salt
1 tablespoon baking soda
3 large eggs
6 cups (1 lb 9 ½ oz) all-purpose flour
2 ¾ cups dried cranberries, chopped
1 1/2 cups chopped pecans, toasted
1 cup crystallized ginger, finely chopped
1 ½ lbs Ghirardelli white chips or chopped white chocolate

Preheat oven to 350ºF. Line baking sheets with parchment (I used foil this time) and set aside.

Cream butter, shortening and sugars. Add vanilla, salt, and baking soda and mix well. Add the eggs in while the mixer is running and continue to beat until well combined. Add flour and beat on low to combine. The mixer will be very full at this point so be careful to keep the flour from going over the edge before it is mixed in. Transfer the batter to a very large bowl and stir in the remaining ingredients until incorporated.

Scoop out tablespoonfuls of dough and place 2 inches apart on baking sheets. Bake for 12-14 minutes or till golden. Cool for a few minutes on baking sheet then remove to wire rack to finish cooling.

Makes about 9 dozen.

*To toast the pecans, place on a rimmed baking sheet and bake at 350F for about 4 minutes, or until fragrant and toasted. Remove and cool completely.

As for the cookie swap, it was so much fun this year (OK, last year–I’m still not adjusted to this being a new year)! I added a Facebook page where we could all connect and gush about the cookies we were baking and receiving, and share pictures, and we just had a blast.

I toughened up and was pretty in-your-face about coming through with the cookies, whereas last year I tried to keep it totally positive. Well sometimes you gotta be tough or people will walk all over you!  Last year six people flaked out and I didn’t know what to do beyond apologize to the those who were left in the cold as I couldn’t afford to make and mail that many cookies (6×3 dozen would be 18 dozen! Yikes.).  Because of my new zero tolerance policy for flakes that I stated in the sign-up form (all flakes are blocked from future swaps), we only had 3 this year, though there were more participants.  I also clued in this year and when those three people didn’t come through with their cookies, I asked for “cookie angels”–volunteers to fill in and send extra cookies to the cookie orphans.  That worked great as there were so many who were eager to share more cookies and no one was left in the cold this year.  Apologies to those who didn’t get all their cookies last year!  I’m a better hostess now so please give me a second chance. :)

All in all the cookie swap was a roaring success, the highlight being raising money for kids cancer and the mixer I got as a reward (see this post if you missed all that).

Oh yes that’s right.  I finally finally finally got myself a proper stand mixer.  A Breville BEM800XL Scraper Mixer Pro 5-Quart Die-Cast Stand Mixer to be exact! And oh yes, I really did name her Xena: Warrior Princess, because she is fierce and sexy.   Do you think I’m thankful and happy and ready to do a celebration tap dance on the rooftop? Well if you said yes to the former and no to the latter, then you’d be right!  But I’m even more thankful for the reason I received this mixer.

As you may know, I hosted a nation-wide cookie swap through my blog earlier this month.  Since I never did an an update, what you don’t know is that we had 72 participants and we swapped a total of 3,574 cookies.  Each person was only required to mail a dozen cookies to three people each (that’s 36 cookies per person) but we averaged more like 50 per person this year.  That is partly because our group just loves to bake and share generously, and partly because we had an extra incentive.

One of our swappers, Marcia L., told us about Cookies for Kids Cancer, a nonprofit organization started by a mother of a young son who died of cancer to help raise money for pediatric cancer research and support families going through what she did with her own son.  The organization is geared to help you raise money for pediatric cancer by hosting bake sales and cookie swaps.

After learning about Glad’s matching program through which they would donate $1 per cookie swapped, I registered our swap and people went crazy with the swapping!  Marcia herself sent the most, with a total of 280.  She swapped with 15 people, and then volunteered as a “Cookie Angel” and sent cookies to a couple people who did not get their cookies.  She definitely was our star swapper, though we had many who went above and beyond (shout out to Eileen, Debbi, Shannon, Selby, Paula, Linda, Cynthia, Laurie, Eliza, Tamara, Sonya, Jessica, Jolie, Kathryn, Marlo, Kathleen, and Amber!), taking on extra matches and becoming cookie angels for those who got stuck with a dud swapper (thankfully we only had three this year, half as many as last year. Progress!).

After I counted our total and reported it to Glad, Marcia informed me of a perk for the hostess that I hadn’t been aware of when I signed up our swap.

I guess you can’t even tell I was excited can you? LOL!  Besides the wrong ill-fitting mixing bowl on my old mixer, it also had a beater that constantly fell out and had to be pushed back in.  In that video of Dennis making my birthday cake, if you fast forward to 1:52, you will hear the loose beater clacking against the other beater.  That went on for five minutes (Dennis thought that’s how it was supposed to sound-lol) and I gladly cut most of that footage.  So yes, to say I was thrilled is really an understatement.  I have wanted a proper mixer for no less than five years and just by doing something fun that helped pediatric cancer patients, I got my mixer.  Wow.

I’m so thankful for Marcia who told me about the Cookies for Kids Cancer organization.  I’m so thankful to all my swappers who did a little extra to help raise more money through our swap for pediatric cancer research.  And boy am I ever thankful to all the aforementioned people, Breville, and Cookies for Kids Cancer for making it possible for me to finally realize my dream of having a quality stand mixer.  I am so happy about this whole situation, it’s just a continuous circle of giving and helping!

Here’s a short video of me testing out my mixer for the first time and of course I initiated it with bread dough (I made my favorite Honey Oatmeal Bread). It handled it great and was so quiet, it didn’t even wake Dennis when I started it up at 3 am.  I’m a happy girl. :)
