White Trash


I drafted this post on December 26th, 2009. It is the oldest draft in my collection, so I’m pretty excited to finally have a fairly decent photo of it so I can share the recipe with you!

On my wedding day eleven years ago, my new Grandmother (this one) gifted me with her church’s fundraiser cookbook*, which included many recipes from her and other members of my new family.  I treasure it!  I love spiral-bound recipe books like these because they are filled with tried-and-true recipes that real people use–simple, unpretentious, and delicious.

Love that it has a cornucopia on it--perfect for my blog! :)

Take this one, for example. I had to giggle when I read the name “White Trash.” I really like the name because it’s funny and does accurately describe the appearance, but it is also known in classier circles as “Christmas Crunch.” I don’t care what you call it, it’s salty and sweet and addictively-delicious!

So this is the last recipe I’ll be sharing before the holiday, and I think you’ll find it a perfect treat to whip up if you need a last-second snack or gift.  Dennis and I are heading to Abilene as soon as we get out of church to spend Christmas** with his family, and will be back some time on Monday so I won’t be posting anything else until Tuesday at the earliest.

White Trash

3 cups Rice Chex Cereal
3 cups Cheerios cereal
2 cups salted, roasted peanuts
2 cups pretzel sticks, broken in half
1 lb. white chocolate or vanilla almond bark*
1 (12 oz) bag M&M’s in seasonal colors

Mix all ingredients except chocolate or almond bark in a large bowl. Melt chocolate or almond bark as package directs; pour over mixture, mixing to coat well. Spread out onto waxed paper to dry. Break into chunks and store in airtight containers or Ziploc bags. Saves well for several weeks.

*1 lb. of almond bark is 8 rectangles.

Toffee Crack(ers)


Salty + sweet = addictive for me in most cases, and this saltine toffee is no exception.  It’s very easy to make, and very delicious to eat.  I’ve made it with and without the nuts and really, I like it both ways!

Toffee Crack(ers)

40 saltine crackers
1 cup brown sugar
1 cup butter
12 oz. bag semi-sweet chocolate chips
¾ c chopped nuts (optional)

Preheat oven to 350. Line a 10×15 cookie sheet with foil and spray with oil. Cover cookie sheet with the whole saltines (don’t crust them). Melt the sugar and butter together in a saucepan over medium-high heat and bring to a boil. Once boiling, reduce heat and simmer for 5 minutes. Pour mixture over saltines and spread evenly. Bake 5 minutes, or until the toffee is bubbling evenly over the whole surface of the crackers. Remove from oven and sprinkle with chocolate chips Let sit for one minute, then spread melted chips with spatula. (An offset spatula works very well here.) If using nuts, sprinkle them on now, and press down lightly.  Cut on diagonal immediately or cool until firm, then break up; pieces can be frozen in an airtight container.

Yield: about 30 pieces

Cream Cheese Chocolate Truffles


Here’s another easy-peasy recipe that you can add to your holiday spread, or package up for gifts!  And it makes a ton, so there really is plenty for a crowd.  And did I mention they’re delicious?  Because they are.

The original recipe instructs you to refrigerate the truffle mixture for an hour, but I take a shortcut and roll them into balls immediately.  This is particularly beneficial if you decide to roll them in nuts,* because they adhere much easier to the softer truffles than when they’re hard after refrigerating.

*I like to use ice cream nut topping because the nuts are chopped nice and fine, salted, and have a little sugar added.

As a last note, if you like the look of truffles rolled in cocoa powder but don’t like the bitter edge to them, you can add powdered sugar to your cocoa to sweeten it before rolling.  It’s been a while since I made these, but I’m 95% certain this is what I did, and that little white spot on one the truffle in the back on the right most likely confirms it.  (Might want to sift your powdered sugar so it blends perfectly!)  I think I remember remarking that they seemed more likely to be approved by the general public, but I do like the bitterness of pure cocoa to contrast the sweet truffle.  Whatever floats your boat!

Cream Cheese Chocolate Truffles

1 (8 ounce) package cream cheese, softened
3 cups confectioners’ sugar, sifted
3 cups semisweet chocolate chips, melted
1 1/2 teaspoons vanilla

In a large bowl, beat cream cheese until smooth. Gradually beat in confectioners’ sugar until well blended. Stir in melted chocolate and vanilla until no streaks remain.  Shape into 1 inch balls, then roll in cocoa powder, finely chopped nuts, or powdered sugar.  Store in an airtight container and serve at room temperature. You may refrigerate the truffles if you won’t be serving them for several days, but remove them at least ½ hour before serving.

Makes about 60 truffles.

Pimiento Cheese Log

Remember when I said I would only be sharing sweets for the rest of December?  Well, I almost forgot about this recipe!  I’ve been saving it for you since I created it in March, because it is just the type of thing I’d usually bring to holiday parties.  If you love pimiento cheese, you’re going to love this.  Or if you love cheese balls, you’ll love this too.  Or if you just like cheese in general…you get the idea.  This is one good cheese log!

Pimiento Cheese Log

8 oz. cream cheese, softened
8 oz . (2 cups) finely shredded sharp cheddar
½ cup Miracle Whip*
½ cup finely chopped green onions/scallions (both white & green parts)
½ teaspoon garlic powder
½ teaspoon salt
3 tablespoons pimientos, smashed with a fork
1 cup chopped pecans

Place everything but pecans in a mixing bowl and beat until well blended and the cheese & pimientos have been broken down a bit. The mixture will be very soft. Scoop out onto a long sheet of plastic wrap and roll into a log, tying the ends with twist ties. Refrigerate overnight. Put nuts in an even layer on a baking sheet and roll log in them. Press nuts into any spots that didn’t get any nuts and carefully lift log onto serving plate. Cover with plastic wrap and refrigerate until ready to serve.  Serve chilled with a variety of crackers.

*I used homemade Miracle Whip (recipe here).  You can use mayonnaise (I also have a recipe for that here!) in place of Miracle Whip but you might need to add a tiny bit of sugar to the recipe if you do.

Puppy Chow/Muddy Buddies

Puppy Chow.  Muddy Buddies.  Monkey Munch. Reindeer Chow.  This recipe goes by a lot of names, but what it boils down to is an addictive, peanut butter & chocolate, crispy & crunchy, sweet & salty treat that abounds at parties and in gift baskets during the holiday season.  (And despite the name, it is most certainly not intended for dogs.  Please do not give this to any dogs-chocolate can kill them!)  I know most of you probably have been making this for years, but I’m sharing this for the .00001% that have never heard of it.  The added bonus is that if you  are in need of some gluten-free treats, this one fits the bill if you make it with Rice Chex.

You must make this!  I promise you will love it.  Unless you don’t like chocolate and peanut butter, in which case I advise you seek counseling immediately.  Or maybe you’d like to trade that dislike in for my dislike of exercise?  Because I could use a lot more exercise and a lot less Puppy Chow.  Anyone?

Puppy Chow

1 (12 oz.) box Rice Chex or Crispix Cereal
1 (12 oz.) package semi-sweet chocolate chips
1 cup creamy peanut butter
1/2 cup (1 stick) butter
1 (1 lb.) box confectioner’s sugar

Pour cereal into a large bowl that has a lid you can snap on and set aside.  Gently melt the chocolate, peanut butter, and butter in a double boiler or in the microwave in 30-second intervals, stirring well in between and removing when almost melted to stir until the residual heat melts the chocolate completely.  Pour over the cereal and stir well until the pieces are evenly coated.  Add the confectioner’s sugar, cover bowl with lid, and shake well to coat thoroughly.  Alternately, if your bowl doesn’t have a lid, you can pour the cereal into a large paper grocery sack, pour the sugar in, fold the top, and shake until combined.  Two Ziploc gallon-size bags will do the trick as well.  Spread out onto wax paper to cool, then store in an airtight container or Ziploc bags.

Buttery-Soft Beer Bread


One of my all-time favorite recipes on this blog is for Buttery Beer Bread, which is slightly sweet with a delicious yeasty flavor, and a thick, crunchy, and buttery crust.  The only downside to it is that it is best fresh from the oven and does not store well, so it’s a little hard to fit into a diet plan because we usually end up splitting the whole loaf between us and polishing it off in one sitting.  (Avoiding dry leftover bread is perfection justification for the overindulgence, no?)  If you’ve made this bread, you know that eating half a loaf of it is a lot easier to manage than one would imagine.  In the interest of trying to shrink our midsections, however, we try not to pull that stunt too often.

Deciding I needed a soft beer bread that stored well so that we could enjoy it for several days versus five minutes, I instinctively knew (well, hoped may be the better word) all I had to do was add an egg and blend the butter in with everything else instead of pouring it over the top.  And voilà!  I was right.  I love being right.  Especially when it results in something so delicious!

This bread has the same flavor I fell in love with in the original beer bread, the beer giving it a nice yeasty flavor despite this being a quick bread containing no yeast (another bonus-fresh bread in under an hour!).  But it is a million times prettier (smooth top versus major bumpiness), the texture is velvety soft when fresh from the oven, and the crust still has just a bit of that buttery crunch to it.  And it fulfills the reason for the modification: it stores well and stays soft and moist!

While I might still make the original if we have company over since there would be less risk of leftovers, and I adore that thick, crunchy & buttery crust, this is the one I’ll be making most often because the texture is so wonderful and its ability to stay that way upon storage robs me of the justification for polishing off an entire loaf in one sitting.  Which I may not be so thankful for, but my hips surely are.

*Despite this loaf storing well, we still ate half of it as soon as it was out of the oven, so I only had half a loaf (OK, maybe a little less than half, truth be told) to photograph the next day.  Sorry.  Our stomachs got in the way of the interests of my blog!  At least we didn’t eat the whole thing this time. At least not all at once.  :)

Buttery-Soft Beer Bread

3 cups self-rising flour*
1/4 cup sugar
1 (12-oz) can beer
1 stick (1/2 cup) salted butter, melted
1 egg, beaten

Preheat oven to 375 degrees. Spray a loaf pan with cooking spray and set aside.

Whisk the flour and sugar together in a large bowl. Add beer, butter, and the egg, and whisk well to combine. Pour into the prepared pan and bake for 45-50 minutes or until golden brown. Remove from pan and cool on a wire rack for at least 15 minutes before slicing.

*I know it’s weird, but I really feel I get the best results using self-rising flour for this bread. However, if you do not have it, you can replace it with 3 cups all-purpose flour, 1 Tablespoon baking powder and 1 teaspoon salt instead. I recommend using a baking powder without aluminum, such as Rumford, particularly in this recipe since you need so much of it. The aluminum has an aftertaste and can foul up baked goods which call for quantities in excess of 1 teaspoon.

Update 2/18/15: I’ve discovered you can substitute honey for the sugar with delicious results as well, lending a light honey-sweet taste to the bread.  Just look at how tender it is!

 

Less-Mess Bacon

Now you don’t need a splatter guard when you fry bacon!  Bakin’ bacon makes the process so simple, and you get perfect, nice & flat strips of bacon just like you get at a restaurant.  Plus, no flipping!

P.S. When I first started trying to think of blog names, I liked “Bakin’ & Bacon” because it indicated my blog would include both sweet and savory recipes, plus it’s cute & clever, but when I Googled it, it was already taken.  Not only that, but Bacon & Bakin’ was taken too. Guess I’m not the only one that loves that name! I also had to nix “My Kitchen Addiction,” and “My Baking Addiction.”  But I’m happy with the name I ended up with!  And I liked Recipe Rhapsody,  my former name, too. Though I can’t take credit for that one, Dennis came up with it!

Less-Mess Bacon

Preheat the oven to 400 degrees. Line 2 rimmed baking sheets with foil or parchment paper, then lay the bacon strips flat, making sure pieces do not overlap. Bake until crisp and browned, 15 to 18 minutes, or to desired doneness, rotating the sheets once. Transfer strips to a paper towel to drain.

How To Make a Splatter-Proof Recipe Binder

A couple years ago I got sick of the huge collection of recipes I had in different locations throughout my house.  A file in the filing cabinet marked “recipes.”  A couple binders with uncategorized hole-punched recipes that were falling out and splattered with batter and grease because I used the recipes so often.  A stack of them on my computer desk.  Fed up, I finally made a binder to keep my favorite tried-and-true recipes in.  The ones I make over and over again and want easy access to.

My friend, Teri, has a binder very similar and I just copied her idea to create my own.  I recently made a starter binder for a friend’s housewarming and took some pictures of the creation process so I could share this idea with you.

Supplies:

Adhesive Index Tabs
Recipes printed on 8 1/2″ x 11″ paper

For this project, I like to use a binder that has a transparent sheet over the top so you can put a “Title Page” inside of it, of your own design. Using page protector sheets to hold the recipes works well for recipes you use often, because the clear plastic protects the recipe. If you splatter it, you can just wipe it clean before returning the recipe to the binder.  It is also more durable and the holes won’t tear as easily as a paper with holes punched in it.

First, write your recipe categories on the paper tabs that come in the index tabs box. Most everyone will use different categories, depending on the type of recipes they use.  For instance, I not only have a “Desserts” category in my own, but also divided desserts into three subcategories: cake, pie, and cookies.  These are the basic categories you might want to include, adding more if you need to:

Breads
Breakfast
Appetizers & Snacks
Soups & Salads
Main Dishes
Side Dishes
Desserts
Etc. (for beverages, condiments, etc.)

Slip the papers into your tabs and then arrange them in the order you want them to appear in your binder. Put enough page protector sheets in the binder for all the tabs. Remove the backing from the first category you want to use and slip it over the side of the first plastic sheet at the very top, then squeeze so it sticks.

These are quite easy to remove if you mess up or want to change how high or low the tab is positioned, so don’t fret if it’s not exactly how you want it. Gently pry it off and adjust it. Repeat the process with the remaining tabs, placing each one on the sheet below the last and a bit lower on the side so it shows beneath the tab before it. Soon you will have a binder that looks like this:

If you like, you can create title pages for each recipe category, as I did. I searched for images using Google, then copied the ones I liked into a Word document and used the same font that I used on the front of my binder to type the category title below the photo.

To create the title page, I did the same thing and searched for a picture I liked (I remember searching for cooking related coloring pages and liked the old-time feel of the one I chose). For the side title, I printed it in a Word document in landscape format in the middle of the page, then folded it to fit the pocket, and with much wailing and gnashing of teeth, I finally managed to get it in. It is difficult to get a paper in that tight spot, so you definitely want to use a folded paper for its sturdiness, or cardstock.

All that’s left is to fill the binder with recipes!

I put my blank page protector sheets in the front of my binder, before the recipes so that when I want to add a new one, I slip it in, then put it in the correct spot in my binder. I give each recipe its own sheet to make it easier to alphabetize them, therefore they are easier to find, but eventually I will have to start putting two recipes into each protector sheet (one facing forward, one backward) so that it doesn’t get too thick.

That’s about all there is to it! Very simple and quick.  What system do you use for organizing your recipes?  I also have about a million and a half saved to my computer into folders with different recipe categories!

Banana Pepper Roast

Our friends Joe and Marissa (of the “good peas” fame) invited us to lunch after church one day a million years ago, and she served a roast along with many delightful sides.  I only took a small portion of the roast ,being much more interested in the salad, her mashed potato casserole, and butternut squash bread, but once I took a bite, I was going back for more.  I’m not much of a meat eater, so when I found her roast irresistible, I asked her what her secret was.

“Banana Peppers.”

“Banana peppers?” I repeated, surprised.  “What else did you use?”

“That’s it.  I just poured a jar of banana peppers over the roast in the crockpot.  The acid from the brine really helps tenderize the meat.”

This was so simple, I had to try it at home.  I’m just surprised it took me so long!  But I’ve made it twice in the past month, to make up for lost time. :)

I adore the salty, piquant flavor the banana peppers & juice impart to the beef, and it really is melt-in-your mouth tender after roasting all day in the slow cooker.  And talk about easy!  Although Teri taught me to sear the outside  of a roast before sticking it in the crockpot, I didn’t even do that. Easy peasy & delicious…squeezy?

I know this combo sounds a bit odd, but you’ve got to try it to believe it!  It goes really well with mashed potatoes topped with a pat of butter and garlic salt, as I discovered after taking this picture. :)

Banana Pepper Roast

1 (3-5 lb) beef roast
1 (16 oz) jar mild banana pepper rings

Place roast in a crock pot and pour the jar of banana peppers, juice and all, over the top. Cover and cook on low for 8 hours or until tender.

Hashbrown Casserole

There is a restaurant here called Cracker Barrel that I’d never gone to until my little sister, who had gone with a friend, told me about their uber-fabulous hashbrown casserole and convinced me if I died without trying it, it would have been a life not worth living.  Seems her older sister’s penchant for drama & exaggeration might have rubbed off on her a bit!  Anyway, I don’t know I’d go so far as to say that you absolutely positively must eat this before you die, but I did think it was very delicious when I finally tried it.

I think it has been ten years since I last had their hashbrown casserole, but when I saw a copycat recipe for it on Big Bear’s Wife, I knew I just HAD to have it again, and added it to my birthday brinner menu.  It was the hit of the evening, and my personal favorite of everything I made!  I seriously could have eaten it alone for my meal.

I don’t know how close it is to the original since it’s been so long since I had it, but without comparing the two I can tell you this is delicious in its own right.  Creamy, cheesy, starchy goodness.  It’s a perfect addition to an old-fashioned country or holiday breakfast.  The bonus is that it’s so simple & quick to throw together!

Hashbrown Casserole

1 (1 lb. 14 oz) bag frozen hash browns, thawed
1 (8 oz) tub sour cream
1 (10.75 oz) can cream of chicken soup
1/2 cup (1 stick) butter, melted
1/3 cup diced onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 (8 oz) package cheddar cheese, shredded

Preheat oven to 350 degrees. Spray a 9×13 dish with oil and set aside. In a large bowl, mix together all the ingredients, using only half the cheese, until well-combined. Spread into the prepared dish and sprinkle the remaining cheese over the top. Bake for 45 minutes. Serve hot.

Veronica’s notes: Angie’s recipe called for 1/2 tablespoon onion powder, but I was making the recipe at my parents’ house and they were out so I made do with fresh onion.  We all loved the flavor, but the powder would certainly make the recipe a bit easier to prepare (no chopping). Her recipe only called for a pound of hashbrowns and 4 oz of sour cream, so if using the powder, you may need to increase it since my recipe is larger. Also, please shred your own cheese. There is a world of difference between the gooey melt you get from cheese you shredded yourself and the packaged pre-shredded kind that has been coated with powder to keep it from sticking together. You will thank me. :)
