Cake Batter Crispy Treats

If you’re like me and need a little help getting through your Mondays, I’ve got a happy fix right here!  I’m a fan of crispy treats, especially those that are a little different, like my favorite Salted Brown Butter Crispy Treats and Gingerbread Crispy Treats, and now I have a third unique and fun recipe to add to my growing list of favorites.  Cake batter flavored crispy treats!

Come on, get up, throw your hands in the air, squeal a little “Yay!” and do a happy dance for technicolor sprinkles.  OK, now your Monday is already off to a better start!

Cake Batter Crispy Treats

1 stick (1/2 cup) butter
1 (10.5-ounce) bag of mini marshmallows
1/2 cup yellow cake mix
6 cups Rice Krispies cereal
1 (1.75-ounce) container of sprinkles

Melt butter in a large saucepan over medium heat and add marshmallows. Stir until they begin to melt, then add cake mix and stir until combined and marshmallows are completely melted. Stir in cereal until it is completely coated with marshmallow mixture.  Add half of the sprinkles and mix. Press into a 8 or 9” square baking dish and top with remaining sprinkles.  Let sit for at least 30 minutes before cutting.

So if you’re like me, you’re wondering what to do with the nearly full bag of cake mix that will remain after making this recipe.  Don’t fret, there are plenty of things that you can easily add it to for more delicious cake batter flavor.  So far I have made cake batter oatmeal (I subbed wheat bran for oat bran and more cake mix for the vanilla protein powder but did everything else the same and felt I was eating a fairly nutritious, not to mention delicious, breakfast), cake batter candy (stirred some mix into leftover white candy coating from a batch of cupcake bites and poured the chocolate into candy cups molds, then topped with sprinkles–tasted fantastic!), and here are a few more ways to use up your extra mix: Cake Batter Pancakes, Cake Batter Cinnamon Rolls, or how about mixing some into a vanilla milkshake to magically turn it into a sprinkle-licious cake batter milkshake?  The possibilites are endless!  Wheeeee!

Tortilla Pinwheels

I know this appetizer isn’t very Easter-y, but it’s party food and the closest thing I have in my saved pictures of all the recipes I need to post so I hope that it might come in handy for a few of you.  If not, you can always save it for a later date!

Whenever I need to bring something to a party, I usually think of desserts first (I just can’t help it), brainstorming what sort of deliciousness I can create, and then I remember I should bring something real to eat as well, and I rely on a few basic recipes for this drudgery.  Crockpot Meatballs and Peppers in Cranberry Chili Sauce is my #1 go-to recipe, and these Tortilla Pinwheels are my #2 for non-dessert party food.  (Did you know party food is divided into just two food groups?  Well, it is in my world, anyway: desserts and non-desserts.  Guess which one ranks #1 with me? )

These are really tasty with a creamy, cheesy filling that is kicked up by the green chiles, onions, and olives.  I never bother, but since they have a southwestern flare, you can serve salsa alongside for dipping.  Enjoy!

Tortilla Pinwheels

1 cup (8 ounces) sour cream
1 package (8 ounces) cream cheese, softened
1 can (4-1/4 ounces) chopped ripe olives
1 can (4 ounces) chopped green chilies, well drained
1 cup (4 ounces) shredded cheddar cheese
1/2 cup chopped green onions
1/4 teaspoon garlic powder
1/4 teaspoon seasoned salt
5 flour tortillas (10 inches), room temperature
Optional: fresh parsley for garnish & salsa

In a large bowl, beat the first eight ingredients until blended. Spread over the tortillas; roll up tightly. Wrap each with plastic wrap, twisting ends; refrigerate for several hours. Unwrap; cut into 1/2-in. to 3/4-in. slices. (An electric knife works best.) Discard ends (into your mouth :D big grin). Garnish with parsley. Serve with salsa if desired. Yield: about 4 dozen.

Creamy Parmesan Spinach Dip


I’ve got a great dip to add to your New Year’s spread!  I saw this over at Gina’s Skinny Recipes and although I added a lot more sour cream, cheese, and mayonnaise to the dip, it still ends up being much lighter than regular creamy dips.  But who really cares about that, anyway?  If it goes on a cracker, my calorie concerns fly out the window and I eat half the batch.  I love dip!  And this one is no exception.

Creamy Parmesan Spinach Dip

12 oz chopped frozen spinach, thawed
1 bunch scallions, chopped
½ cup Parmigiano Reggiano
1 (16 z) tub light sour cream
½ cup light mayonnaise
2 teaspoons sugar
½ teaspoon garlic powder
Fresh cracked pepper, to taste

Squeeze out as much water from the spinach as you can. Combine all ingredients in large bowl and stir until well mixed. If not serving immediately, remove from refrigerator 2 hours before serving.

*Veronica’s notes: all I could find is a 12 oz bag of spinach but I know most of you will only be able to find the 10 oz container.  No worries, just use that and leave everything else the same.  This dip will not suffer from being more creamy. :)

Seasoned Crackers


It’s been several years since I’ve made seasoned crackers, and I decided I wanted to add them to our holiday spread again this year, which always includes lots of random and fun snacks and appetizers.  But I lost my recipe!  I knew my friend, Sandy, had her recipe for them posted on Facebook, so I went there in a frenzy when I was whipping these up the night before we were set to travel.  (Thank you for saving me, Sandy!)  Realizing I only had a single bag of oyster crackers, I subbed in a bag of Goldfish crackers and decided to double the ranch dressing mix and the end result was some of the best seasoned crackers I’ve ever had.  In this case, losing my recipe was a lucky thing because this new version is even better than my old favorite!

These would be perfect for New Years, Super Bowl, tailgating–basically any party in any season!  During the winter months, the leftovers make a great garnish for soups.

Seasoned Crackers

1 (12 oz) bag oyster crackers
1 (6.6 oz) bag Goldfish crackers
1 (1 oz) envelope ranch dressing mix
2 teaspoons garlic powder
1 teaspoon dried dill weed
½ teaspoon onion powder
½ cup vegetable oil

Mix crackers in a large bowl. Sprinkle dressing mix and spices over the crackers, then pour oil over it all. Mix until the oil is absorbed. Cover and store overnight for the flavors to develop.

*Veronica’s note: Cheez-its would make a great substitute for the Goldfish crackers! Use about three cups, or 7 ounces.

Aunt Ruby’s Party Mix


Every year when I was growing up, my Aunt Ruby would make up baskets of goodies for all her extended family and I eagerly anticipated her visit each year to dig into all the delicious treats she slaved away in her kitchen to make.  Sometimes there would be cookies, sometimes her homemade summer sausage, and always  her famous party mix.

I never knew until recently why it was so much better than other party mixes until I finally asked her for the recipe and discovered her secret ingredient.  Life Cereal!!  It looks so much like Chex Cereal that it’s camouflaged and you don’t really notice it visually, but it gives a hint of sweetness to every bite that makes this buttery, salty concoction utterly addictive.

If you already have a favorite party mix recipe, try substituting in some Life cereal for part of the Chex–I think you’ll like it!

Aunt Ruby’s Party Mix

I’ve scaled down and altered the recipe a bit since her original recipe makes enough to feed an army.  If you’d like to feed an army, click here for her original recipe.

In a large roaster pan, mix together:
4 cups Rice Chex Cereal
4 cups Corn Chex Cereal
4 cups Wheat Chex Cereal
4 cups Life cereal
3 cups pretzel sticks
2 cups Spanish peanuts (roasted & salted)

In a saucepan, melt together:
2 sticks (1 cup) butter or margarine
¼ cup Worcestershire sauce
1 tablespoon seasoned salt
2 teaspoons garlic powder
1 teaspoon onion powder

Pour the mixture over the cereal and mix well. Bake uncovered in preheated oven at 250 degrees for 2 hours, stirring every 15 minutes. Spread on waxed paper to cool and store in an airtight container or Ziploc bags.

Caramel Walnut Brownies


These things are killer. But I must apologize because they have a very unique ingredient that can be hard to find:

Seriously! Did you know that this even existed??  Can I tell you how much I LOVE this product now that I’ve discovered it?????  Caramel cake–it’s every bit as delicious as you imagine it would be.  And the mix makes for some seriously excellent “brownies.” (I put that in quotations because they actually have no chocolate in them and I thought that chocolate was essential to a brownie!)

Do I even need to tell you how good these are?  Caramel on caramel with walnuts in the middle.  Ooooh, so delicious and they were a favorite at our family’s Christmas party.  If you haven’t seen the cake mix on your store shelves, see if you can get the store to get it special for you like I did.  It’s worth the extra effort!

Caramel Walnut Brownies

14-oz. bag caramels
5-oz can of evaporated milk, divided use
1 box Duncan Hines Caramel Cake Mix
1 teaspoon cinnamon
12 tablespoons butter, melted
2 teaspoons vanilla extract
1 1/2 cups walnuts

Preheat oven to 350 degrees. Grease a 9X9-inch pan and set aside.

Place the caramels in a microwave-safe bowl and add 1/3 cup of the evaporated milk. Microwave for 1 minute on high and stir to combine. Continue microwaving on high at 30-second intervals, stirring each time, until the caramel and milk are melted, smooth, and combined. Set aside.

In a large bowl, combine the cake mix, cinnamon, butter, vanilla, and remaining 1/3 cup evaporated milk. Stir until combined and no lumps remain.  Spoon half of the batter into the prepared pan and spread evenly. Set the remaining cake batter aside. It will firm up as it sits.

Slide the pan into the oven and bake for 10 minutes.  Spread the walnuts onto a shallow pan and toast them while the cake is baking. Remove the walnuts from the oven when they are fragrant and golden brown.

Allow the cake to cool for 5 minutes. Pour melted caramel over the semi-baked batter and evenly sprinkle the toasted walnuts on top. Take large spoonfuls of the remaining batter, approximately 1/3 cup, which is now firm, and press it between the palms of your hands. Pat it as thinly as possible without breaking it apart. Lay the batter on top of the walnuts. Continue patting the batter and placing it on top of the walnuts. There might be some overlapping of the batter, and there might be several spots where the caramel barely peeks through. Precision is not necessary.

Bake for 25 minutes. Allow to cool in pan on a wire rack. It is helpful to refrigerate the brownies before cutting them into squares. Serve at room temperature.

*Veronica’s notes: I used an 8×8 pan, which made them a bit thicker, and I had to bake them five minutes longer to get them done.  I also found it difficult to cut them after refrigerating them overnight because the caramel was so hard.  I’d say either only refrigerate them an hour or two or leave them out for at least fifteen minutes before trying to cut them if you’ve left them in there for a long time.

Crockpot Meatballs and Peppers in Cranberry Chili Sauce


I have brought these meatballs to our family’s Christmas eve party for the last two years and both times they disappeared quickly, followed by high praise. For good reason–they are the best party meatballs evah! Even if you don’t add the peppers, they’re great, but the peppers add some nutrition, some beauty, some class, some variety, some color, and, most importantly, some extra flavah!

Betty Crockah! Respiratah! Operatah! What’s for dinnah? ……..supercalifragilisticexpialidociousah!

I apologize. I’m sort of crazy with exhaustion right now and am finding the strangest things amusing. You should try replacing the ending letters of words with “ah” when you’re tired, too. It makes exhaustion more interesting.

Anyway.

I’m squeezing this recipe in this week (and I have so many more to come–sorry I’m a procrastinator!) because you so need to bring them to your own Christmas eve party this year and then keep making them for things like New Years, the Supah Bowl (hehehe), potlucks, etc., etc. They are the best evah! Wait, I already said that. I’m so tired.

Crockpot Meatballs and Peppers in Cranberry Chili Sauce

1 (5 pound) bag frozen Italian meatballs
1 green pepper
1 red pepper
1 yellow pepper
2 (14 ounce) cans jellied cranberry sauce
2 (12 ounce) jars chili sauce
1/2 teaspoon red pepper flakes, optional but recommended
Salt
Freshly ground pepper

Place the meatballs in crockpot. Slice all the peppers into strips, discarding the cores and seeds, and place on top of the meatballs. In a large saucepan, combine the cranberry sauce, chili sauce, red pepper flakes, a pinch of salt, and some pepper, and bring to a simmer. Whisk while heating until the sauces combine and you have a smooth sauce. Pour over the peppers and meatballs; do not stir. Cook on the low setting for 8 hours or on high for about 4 to 5 hours. Stir well to incorporate the peppers before serving. To make these into a meal, serve over rice.

Antipasti Sandwich

This sandwich would make great party food because it needs to be made ahead and it’s fun & unique with great flavors.  And of course it’s perfect for summer because there is absolutely no cooking involved!  But don’t wait until your next party to serve it–make it for your own family for dinner like I do! I’ve already made this sandwich twice in the last month.  We love it! 

 

Antipasti Sandwich

Coarse salt and ground pepper
1 medium zucchini, thinly sliced lengthwise
1 red bell pepper
1 loaf crusty bread (about 1 lb), sliced in half lengthwise
1 can (15.5 oz) cannellini beans, rinsed and drained
1 garlic clove, roughly chopped
1 tablespoon fresh lemon juice
1 tablespoon extra-virgin olive oil
1/2 lb. mortadella, prosciutto, or thinly sliced deli ham (I used Genoa Salami)
1/2 cup fresh parsley leaves
1 cup marinated artichoke hearts, drained and quartered or sliced
1/2 cup (1 oz) shaved Parmesan
1/2 cup pepperoncini, drained and halved if large 

Sprinkle a double layer of paper towels with salt and place zucchini on top in a single layer. Sprinkle with salt and roll up like a newspaper. let sit 10 minutes to draw out excess liquid. 

 

 

Over a low gas flame or under the broiler, roast bell pepper until skin is charred, 10 minutes, turning frequently. Place in a bowl and cover tightly with plastic wrap. (I always just pop the blackened pepper into a quart-size Ziploc bag.) Let sit 10 minutes. Rub bell pepper with a paper towel to remove skin, then core, discard seeds, and slice flesh into strips. 

The black skin is very easy to remove once it sweats for 10-15 minutes.

Pull out about 2 cups bread from inside loaf halves. In a food processor, combine beans, garlic, lemon juice, and oil and puree until smooth. Season with salt and pepper. Completely cover inside of both bread halves with an even layer of bean puree. 

I used half a loaf of French bread both times because I'm only feeding 2 people. This makes 3 sandwiches.

 

 

Arrange zucchini on bottom half of bread. Top with meat, parsley, roasted pepper, artichokes, Parmesan and pepperoncini. Sandwich with top half of bread and wrap tightly in plastic. Place on a baking sheet in refrigerator. Place another baking sheet on top and weight with several heavy cans. Let sit at least 3 hours (or up to overnight). To serve, unwrap and cut into wedges with a serrated knife.
