Food has always been important to me, even when it was just pretend! Play food was one of my favorite “toys” as a child.
Welcome to my blog! As you may have guessed, my name is Veronica. I live in Wichita, Kansas, am thirty-two years old, have been blissfully married to my soul mate for twelve years, and have a fur baby (of the canine variety) named Jessie. I’m a Christian and am devoted to my God and to Jesus Christ, who I’m eternally grateful to and for. I work as a data conversion operator for the US Postal service, and love it! (Click here to find out more about my job.) I also love to bake, and enjoy cooking, so I started this blog as a way to share the best recipes I come across and create in my kitchen.
I started out blogging recipes on MySpace and eventually started this blog, originally called Recipe Rhapsody, in the fall of 2009 where I copied all my past recipes from MySpace and continued food-blogging here. When this blog was “Recipe Rhapsody,” it was all about food and recipes. Once I left MySpace, however, I started to miss having an avenue by which to share other parts of my life and thoughts, so I eventually changed this blog in May of 2011 to be more all-inclusive. Veronica’s Cornucopia was born!
Why “cornucopia?” Well, my blog is a collection of my favorite recipes, my musings, memories, stories, photos & videos from my life “adventures,” and now has weekly thanksgivings, (which makes many think of the American holiday, which is commonly equated with a cornucopia because it takes place at harvest time). I like to think of my blog as the cornucopia holding all these recipes, thanksgivings, and adventures inside of it.
While I do (usually) feature a weekly post , “Thankful Thursdays,” I try to keep food & recipes as the main focus of my blog, with other features thrown in for fun once in a while. Baking is my forte, and I do about a 2-1 ratio of recipes for sweet treats versus meals and sides. I tend to make healthy food (though not lately-lol), and very unhealthy sweets, because that is how I balance my love for good desserts–by eating healthy meals so that I can splurge on a full-fat, full-sugar dessert. When I’m watching my weight, I will include nutritional information on recipes, and you will always know when I’m in a weight-gaining period because you won’t see any nutritional information! (I have been in one for over a year now-ha!) I don’t usually share the nutritional information for desserts, however, because I figure most are like me and if they’re indulging, would rather not know how much. :)

Mrs. Veronica,I would say hands down,that “Chocolate covered Carmel w/ Peanuts”,is a very beautiful post!!I see many posts,and look over them,and many blogers do such a fine job,but there is something about the simple way you do it,and the pictures did so good!! The finish product,have that Special Homemade look,which some shoot for the fancy,sorta fake,like the magizines,or the Great Chelfs,but I would gladly,pass them and pick up one of yours!! You also,talk about early life and food,I see so many kids raised this way its sorta dishearting.I like to see kids treated as we treat adults,and not confine their food,or hide it from them.Keep cooking,and shareing with the kids and others,we’ll change it,making a new family,through out kids,grandkids,one at a time.I found out a long time ago,if I got plenty of candy,fresh fruit,and quality food around,the kids get where the candy is nothing,and don’t long for it.They grumble,if the food isn’t quality (homemade with taste),and love fresh fruit!! I even do most of my crafty stuff on the kitchen table…even if I do have a room for it on the other side of the house. I prefer to sit at the kitchen table .. whittling away on something while muffins are baking…

Hello Veronica I love your blog! You sound just like me. I love food and the love of baking and cooking is my forte also. My kids are already grown, two left the nest except my 28 yr old son who has CP (cerebral palsy)I’ve been caring for him all 28yrs. I love making cakes, I do not sell them Though, wish I could but my son keeps me busy. My daughter is getting married this summer And I will be making her cake, God willing that all is good and I’ve been looking for a good Red velvet cake recipe As I have tried many from online but havent had any luck,because they turn out dry, I want to find a rich moist one,Do you have one that you can forward to me? I will truly tnank you from the bottom of my heart, my Daughter likes this cake and truly she deserves the best. she is the only one after my husband to whom I’ been married to for 33 yrs. who goes out of her way to care for her brother so that we may go out to dance,or just enjoy ourselves and take some fresh air. Wow, you’ve got your hands full! I bet you are a busy lady, and it’s so sweet of you to make your daughter’s wedding cake. Well, funny you should ask for a red velvet recipe because I keep meaning to find the perfect one and just have never gotten around to it! The only one I’ve tried wasn’t any good so I didn’t save it. My secret to scrumptious red velvet is to buy the Duncan Hines cake mix. Seriously, it’s perfect, and no one has to know it’s not from scratch. Top it with homemade cream cheese frosting (please don’t use the canned stuff) and you’ve got yourself a wonderful red velvet cake. I always use this mix and people love “my” red velvet cake. I’ve made them for weddings 3 times now (with my homemade cream cheese celebration frosting) and it’s always a big hit. I love your blog! I am saving recipes to try very soon! I love to bake and cook and am always looking for new recipes. I am also attempting to make special birthday cakes for my little ones this year. My son will be three this summer and is getting a train cake with individual loaf pan cakes decorated as train cars with candy, etc… and my little girl will be one in the fall and she is getting a topsy turvy one I think!! God willing!
I do not like cream cheese frosting, but love butter cream (wedding cake frosting?)… do you have a recipe for it that is good? I buy Wilton’s when I need it right now.

I do have a good white buttercream recipe here https://reciperhapsody.wordpress.com/2010/10/28/celebration-frosting-a-giveaway/ (tastes like wedding frosting) and you can buy the creme bouquet flavoring (secret ingredient!) at Cake Stuff here in Wichita at Central and Tyler. For an even better buttercream, just use butter in place of the shortening, which will make for more of an ivory colored frosting.

I, too, was raised in a “health food only” home. The first year I was off in boarding school was my crazy rebel year of chocolate. ;) I ate chocolate-covered dried strawberries for lunch and frosted cake for dinner. It was pretty bad, haha, but now I’ve found a better balance between sweets and savory. ;) Still love to bake, though.

Haha, yup, that definitely sounds familiar! I went hog wild after leaving home and gained 60 pounds before I reigned in the carb beast. Funny thing is, now I really enjoy the types of foods I was raised on, but I don’t restrict myself to health-food only any more!

Ahhh, Veronica, I am a newbie to reading blogs and truly can’t remember how I got here. Within a few lines of reading, however, I’m convinced we are sisters! Actually my sons are 32 and 34, so I could be your mother, lol. We have such similar tastes, belief in the Lord God, and when I found the post of you singing “think of me” I just knew it! I am also a cheesecake fanatic, a retired physician, and was told by a cardiologist 15 yr ago that I should quit medicine and make cheesecakes for a living. Though I’ve made and sold a fair number, I prefer my moniker of Mad Scientist in the Kitchen and love all forms of baking. Cooking, yes, but to a lesser extent. Though a couple of bloggers have encouraged me to start a blog I have no idea where or how to begin. For now I just wanted to let you know that you now have a new loyal reader/subscriber.
