Greek Salad

Since this is my first blog of the week, I hope you’ll forgive me for skipping Thankful Thursday in favor of a recipe for Greek salad.  I made it months ago and kept forgetting to share it, but now that the weather is heating up and cool, crunchy salads are especially appealing, I knew it was now or never.

I’ve eaten a lot of Greek salads at restaurants and they are always lettuce salads with kalamata olives, red onions, tomatoes, and feta cheese.  This salad has the same elements but the lettuce is replaced with chopped peppers and cucumber.  The result is a crunchy, more fulfilling salad–it really feels like you’re eating something other than air with some toppings.  And it’s so delicious!  My husband’s favorite salad is a Greek salad and he really went wild for this, somehow managing to eat all but the little bit I managed to grab for myself before he basically confiscated the whole bowl and started murmuring, “My preeeecious.”

It makes a wonderful side dish for a Mediterranean meal and I’ll be sharing the recipe for the chicken I served it with tomorrow.

Greek Salad

Dressing:
½ cup extra virgin olive oil
¼ cup lemon juice
1 teaspoon minced garlic (from a jar is fine)
2 teaspoon dried oregano
1/8 teaspoon salt
Dash of pepper

Salad:
1 large cucumber, quartered lengthwise, seeds removed then chopped
1 ½ cups chopped tomatoes
12 large kalamata olives, quartered
1 cup diced green pepper
¾ cup thinly sliced red onion
3.5 oz good quality feta cheese, diced

Mix the dressing together and store at room temperature until ready to serve, preferably overnight to allow the flavors to develop. Combine salad ingredients, shake the dressing and add half of it, then gently stir everything together. Add more dressing to taste.

P.S. My reason for not having ads until now has been a fear of turning my blog into work instead of something I do for fun, turning my concentration from creativity to money.  So far there’s no difference in my thinking, so maybe I can make a few cents while I’m having fun without it spoiling my fun. :)

  1. Hi Veronica! Your Greek salad looks delicious. I love that combination of flavors so I will have to give this one a try. I signed up with Food Buzz and they have ads on my blog. The revenue it generates helps with the cost of hosting and IT support costs. It hasn’t changed anything about the way I post or the content of my blog.

    • That’s always been my fear but I think I’m probably the only person that thinks this way. Most people would love to make money doing what they enjoy but I’m weird and for some reason, earning money automatically makes me not enjoy what I love. So far so good, though!

  2. i love the sound of this salad! so refreshing and summery! and i’m going to check out the wordads program, for some reason i’ve never heard of it til now. i’ve considered moving my blog so i can sign up for advertising but if wordpress has its own now, maybe i’ll just keep it simple.

  6. I think this is a great step to take my friend – once I get my own domain I would like to apply for this program too :)
    Also a wonderful salad recipe – makes me feel like I can see the gorgeous Greek beaches :D

  7. Mmmmm…there is a local restaurant we frequent that is owned by a Greek family. The food there is wonderful…my favorite being the lamb burger and tzatziki with pita…but they also make a Greek salad sans the lettuce…JUST LIKE YOURS! It’s wonderful and yours looks delicious!

  8. There is nothing wrong with trying to make a few bucks :) I love greek salads because the ingredients are usually so flavorful you don’t need much dressing!

    This salad sounds so yummy. I love veggie salads. I will forgive you for not posting Thankful Thursdays! (At least just this once.) Good thing you posted a great salad, perfect for summer!
    Good luck with the ads. I had a lot of Google affiliate ads up when I first started but I made nada. I took them down and I like the look without them, but I hope you make lots of moolah and please keep your blog fun!
