Avocado Chocolate Pudding

You may have noticed I’m no longer posting regularly.  I have a feeling that’s how VC will be from now on, with periodic posts when I have the time.  While I hope my sporadic posting doesn’t bother any of my readers, I likely wouldn’t begin to post regularly for your sake at the expense of my own, so it would help my conscience out a lot if you would just be OK with it.  Thanks. :)

Onto the pudding.  I know it sounds weird, but you just have to try this to believe it how good it is.  Even my avocado-hating husband loves this pudding!  Basically it’s just avocado blended up with cocoa powder and agave nectar to create a sweet, silky, perfectly chocolate-y pudding.  No dairy, no refined sugar, no gluten, no cooking, just blending and eating of the most delicious & wholesome dessert ever…refrigeration totally optional.  We couldn’t wait and ate ours as soon as it was blended and it was fabulous.  But I bet it would be even better cold.

Chovocado Pudding

1 ripe avocado
1/4 cup cocoa powder
1/4 cup raw agave nectar
1/4 cup almond milk
1 teaspoon vanilla extract

Peel and quarter the avocado. Put all the ingredients in a Magic Bullet or food processor and blend until smooth. Serve and enjoy!

  2. Post with whatever frequency works for you. And thanks for letting us know it will be sporadic – now I wont worry that my email is messing up if I don’t see something daily from you! As for this pudding….I will keep an open mind and make it and try it. It looks awesome….and I do love avocado (though I have never thought to mix it with chocolate).

    • You can’t taste the avocado at all once the chocolate is in there, so it doesn’t have any funky taste. I like avocado too but wasn’t sure it would work with chocolate. I was pleasantly surprised!

  3. I will have to test this out of my hubby…I know the avocado must give an amazing texture…and it looks so decadent! But if I mentioned avocado, he would never take a bite!!! Great post…and I’m cutting back on posts, too…there’s not enough time in the day to do it all :)

  4. Yum, chocolate pudding is already good but if you add avocado it has to be 5 times better. Oh and post when you can, it is your blog :)

    I think I finally figured out the email subscription thing on my blog, so you can add your email in the lower right of my blog and we will see if it works :)

  5. totally going to give this a try! Saw this on Dr Oz one time, I think…it was interesting to me…but now I actually have the recipe!

    I only post when i have time to….real life will always come first…and that’s just how it is! :)

  12. I have to admit to not being an avocado in desserts believer until just recently. I had an avocado frozen yogurt that was absolutely fantastic, and now you have me just as eager to give this a try. I love that it’s not made will heavy cream. Brilliant!

  14. This sounds too good to be true–healthy, way easy, AND chocolatey? I must try it.
    As for posting, whenever you put up something, whether it’s once a week or once a month or more or less, I will gladly read! I’m happy you don’t feel pressured to post regularly just for the sake of . . . precedent? Doing what you’ve always done? Blogging is about whatever you want, so . . . yeah. Go you.

    • I guess I just wanted to post daily for the sake of my readers, but honestly probably everyone wants something different. Some probably want a new post daily, some probably only one a couple a week and some maybe could care less. I personally prefer less posts from those I follow b/c I’m too busy to keep up with daily postings but I know I’m weird and don’t assume everyone’s the same way. Anyway, daily just ain’t happenening and neither is scheduled like Tues/Thurs every week. It will always be a surprise. So, if I can’t keep things fresh with my content, at least the random postings will still keep it a little interesting. lol
