Homemade Magic Shell

Have you ever had Magic Shell?  If you haven’t heard of it, it’s a Smucker’s ice cream topping that comes out liquid, like chocolate syrup, but hardens when it comes in contact with your ice cream, so that you have to tap and break it to take a spoonful of icecream.  It’s so cool!

My husband is obsessed with it, but you can rarely find the peppermint kind, his favorite, so I started making it for him last year.

It is super simple to make, and you can add any extracts you like to change the flavor profile.   You can also use dairy-free chocolate, such as Ghirardelli semisweet chips, and you have a vegan topping for your vegan one-ingredient ice cream. Since that ice cream is so healthy, I didn’t feel too guilty about adding some of this to the top of it and calling it my breakfast.  :)

1 1/2 cups (300 grams) semisweet chocolate chips
1 cup (200 grams) refined coconut oil
pinch of salt

Place the chocolate and oil in a microwave-safe dish and microwave for thirty seconds, stir, and microwave another 15 seconds. Repeat, if necessary, stirring well every 15 seconds, until mixture is melted and smooth.  This can also be done in a double boiler. Stir in salt and store in an airtight container at room temperature.  Mixture will remain liquid during the summer, but might solidify during the winter.  If it becomes solid, simply heat it until liquid again.

Peppermint Magic Shell: add 2 teaspoons peppermint extract.  I like to divide the batch in half, leaving half plain and adding 1 teaspoon peppermint to the other half.

Makes about 2 cups Magic Shell.

  3. Well, Just look at that!! Girl, you are talented! I always wanted to know how that stuff hardened like that. I know yours has got to be good. I will try this. I know the store bought type has an after taste ( of course, that’s what I think anyway :) ) Gee, it is very simple to make!! Thanks for posting :)

    • The magic is in the coconut oil. Chocolate hardens when cold, just like coconut oil, but the oil thins it out so that it makes a thin, crisp coating on your ice cream. I don’t think this has an aftertaste, as it is very natural. I have not tried using virgin coconut oil yet, but would like to as that would make this actually healthy!

  6. I remember Magic Shell, that stuff is great. It reminds me of the dipped cones you get from DQ or Fosters. I still take my kiddos for dipped cones, but it would be fun to try and make this too. I’ll give it a try.

  13. Sweet! I really don’t care for the Smuckers and whatnot.. will have to try this, much “healthier” Have you seen that website Food Facts see whats really in your food…? I have them on Facebook, i think you might be interested.

  16. DANGEROUS to have in the house…. we go thru a bottle in no time at all!!!! I have virgin coconut oil…is that non- or un- refined then? Do u think i will need to buy the refined kind?

    • I think it will work the same, but the unrefined (virgin) oil might give it a slight coconut flavor. I don’t think that would be bad though! If you try it, do let me know if you like it b/c I want to use virgin as well b/c it’s healthier.
