Mocha Toffee Brownies

I’ve signed up to participate in an online bake sale to help fellow food blogger, Stephanie of Bite by Bite, raise money for The Leukemia and Lymphoma Society while she trains with Team in Training to complete a marathon on June 5th.  I ran a half marathon with Team in Training in 2008 and I love to bake, so there was no question I was joining the effort!

My submission to the sale will be a batch of these Mocha Toffee Brownies.  In case you can’t tell from the photo, they are delicious! Imagine a thick, Kahlua-infused brownie with a layer of toffee & almond-studded milk chocolate in the middle, and a heavy sprinkling of crunchy English toffee baked into the top.  It’s an incredibly decadent treat.  The second best part?  They are incredibly easy to make!

Mocha Toffee Brownies

1 (19.9 oz) box fudge brownie mix
1 stick (1/2 cup) real butter, melted
1/4 cup coffee liqueur, such as Kahlua*
2 large eggs
2 large (4.25 oz) Symphony candy bars with almonds and toffee chips
1/3 cup toffee bits

Preheat oven to 350 degrees.  Grease the bottom of an 8×8 baking dish.  Mix together brownie mix, butter, coffee liqueur, and eggs until well mixed.  Spread half into prepared pan and place the candy bars side by side on top.  Cover with remaining batter, smoothing with a spatula.  Sprinkle toffee bits evenly over the top and bake for 40-45 minutes.  Cool completely in pan on wire rack before cutting.

*For Toffee Brownies, which are just as fabulous, omit the coffee liqueur and replace with 1/4 cup water.

  1. I LOVE kahlua! My dad used to make it. I don’t even like coffee but I love kahlua! These look awesome! Someday when I’m nice and thin I’d love to scarf a batch of these…Meanwhile, I’ll continue eating my salad.

    • Your Dad used to MAKE Kahlua? Seriously? How do you make it??? That’s so cool! We don’t drink but I always have Kahlua and rum on hand for baking. But every time I open the bottle of Kahlua, I really badly want to mix it with milk or ice cream but just ignore the craving and it passes. When we were little, my Mom would let us pour Kahlua and cocoa liqueur over our ice cream without even thinking about it being alcohol and then my Dad found out and freaked! Needless to say, we didn’t get any more Kahlua after that. LOL!

    • Seriously? That’s how far you have to go to get Kahlua? What is UP with that????? If you can find any other coffee liqueur, that would work too. Or you could probably even use espresso. But you can also use water in place of the Kahlua, call them Toffee Brownies and they are seriously still incredible. Promise.

  8. I love that you make brownie mix variations. I agree the mixes are so good it’s kind of not worth it to make scratch brownies.

    • Yeah, I’m weird like that. I will spend half an hour making frosting to put on a cake that’s from a box! I guess I just want the best like to cut corners while I’m at it.

    • I love them so much. Too much! They really are, as you say, crack brownies! I used to make them without the Kahlua and added is as an afterthought this time and loved how they turned out.

  12. Yum! These brownies look awesome! I’m loving the added Kahlua…how can that be bad? Next time I’m in Ohio I’m going to have to steal a couple bottles of homemade Kahlua from my Dad :)

    • I just found out you can make it at home–I’m so doing that next! I use a big bottle every year just for baking. I’m kinda obsessed.

  13. I already loved your kahlua brownies and now you go and post these!? I’m going to be in heaven. I’m sure it will be my new favorite. And my friend that I make the kahlua brownies with all the time. I have a recipe for homemade kahlua if you’d like it :) Cheaper than buying it too and oh so good!

    • Suzie! I’m so mad I did not already know that you can make it yourself! I just found out when Debbi left her comment and now it seems I’m the only one who DIDN’T know you could make it! Arg! I use it so much, that would really save money. I found many recipes and they’re all different so I’d love your recipe b/c none of those have reviews and I trust you.
