Flatlander Meatloaf & Giveaway!

Last year my cousin, Eric, started up his own barbeque sauce company called Flatlander (you know, because we live in Kansas–the flattest place on Earth!), and I am in love with his products.  There are three: Original Barbeque Sauce, Spicy Barbeque Sauce, and Doo-Dah Rub.  (Doo-Dah is Wichita’s nickname in case you were wondering about that one).  They are all fantastic but I can’t get enough of the spicy sauce.  I went through an entire bottle yesterday!  Sometimes I will just take slices of cheddar cheese and pour some of that sauce on top for a snack, and once I even poured some directly into my mouth.  I’ve never been a huge barbeque sauce lover, but I do love this sauce!

The original sauce is sweet & perfect.  The spicy is mild enough that even people who don’t like heat would enjoy it, but I really like the zip it has compared to the original.  The rub is a blend of spices & sugar and tastes incredible on chicken.  OK, it tastes incredible on everything–it’s very versatile.  I even put it on my green beans once!

My favorite thing to make with the sauce is Smoky Barbecue Chicken Pizza, but it is good on anything.  My most recent creation is this meatloaf, which I named after the company since I used two of Eric’s products in it.  It is a fun twist on traditional meatloaf, with bacon, cheddar and onions in the loaf and barbecue sauce, more cheddar & bacon, and french-fried onions on top.  Paula Deen, eat your heart out!

Flatlander Meatloaf

4 slices bread
2 lb lean ground beef
1 ½ cups shredded cheddar cheese, divided
6 slices bacon, cooked and crumbled, divided
1 small onion, chopped
1 (8 oz) can tomato sauce
1 egg, lightly beaten
2 T Doo-Dah rub*
½ t salt
¼ t pepper
½ c barbecue sauce (I used Flatlander’s spicy)
1/3 c French fried onions

Preheat oven to 350 degrees.  Tear the bread slices into small pieces and process in a food processor or blender until fine crumbs.  In a large bowl, mix the bread crumbs with the ground beef, 1 cup of the cheddar cheese, 3 slices of the crumbled bacon, onion, tomato sauce, egg, Doo-Dah rub*, salt & pepper.  Pat it into a loaf pan and spread the barbecue sauce on top.  Bake for 1 ½ hours (or until a meat thermometer reads 160° F), then remove to drain off the fat & juices, then put more sauce if desired & sprinkle remaining ½ cup cheese, 3 slices crumbled bacon & French fried onions.  Bake until cheese is melted, about five more minutes.  Remove and let sit 10 minutes before slicing. 

*If you would like to make this without the Doo-Dah rub, you could try omitting it completely, replacing it with a mixture of 1 T brown sugar, 1 t paprika, 1 t chili powder and 1 t garlic powder, replacing it with your own meat rub, or replacing the tomato sauce with barbecue sauce.

  6. As a former St. Louisan and now a well transplanted San Diegian I believe the true test of a spicy BarBeQue sauce and rub, is ribs…pork ribs in any cut; Santa Barbara, baby back, St. louis or the traditional Spare.

    Ribs would be lightly oiled and rub applied, wrapped and refrigerated overnight.

    I would Que them slowly at about 275-300 F over indirect heat in a covered Weber kettle. Kingsford charcoal with Hickory blocks well soaked to provide smoke. Charcoal started with a chiminy device to alleviate any possibility of “starter fluid flavor”. I don’t care for hydrocarbons in my food.

    The sauce will be applied during the last 10 minutes of cooking. The timing will vary depending on the rib cut and size.

  7. WHERE can I get this sauce? I have tried every brand on the store shelves and just haven’t found anything to be loyal to…. I’m soooo ready to try this one! :) thanks! and my fav thing to use BBQ sauce on is PORK STEAK on the GRILL :) Mmmmmmmmmmmmmmm!

    • You can click the Flatlander link above to contact them through myspace or email Eric at flatlanderbbq@att.net . Sauces are $6/bottle and the small rub (as shown) is $4. They have a larger rub that I believe is $6 but don’t quote me on that. Since you live here in Wichita, I can do the legwork for you–let me know which ones you want!

  8. Ok, so you know my first question will be what is it made from, so I can tell if Wesley can have it. I am more excited about the rub, because we use rubs a lot on our bbq. Sauces tend to be un-Wesley friendly, so we don’t use them as often. I guess my favorite use is to mix it with ranch to make a dipping sauce or on pulled pork.

    • OK, here’s what’s in the sauce: tomato sauce, cider vinegar, Worcestershire sauce, yellow mustard, garlic, black pepper, cayenne pepper, seasoned salt, onion powder, liquid smoke, lemon juice, chili powder, molasses, Coke Cola, and brown sugar. It doesn’t seem like any of that would be non-allergy friendly but you’d know better than me. Love your idea of mixing it with ranch for dipping sauce!!

    I love to make ribs with BBQ sauce. But something weird and embarrassing, I like to put BBQ sauce on macaroni and cheese. My hubby thinks I am so gross!

  16. I love bbq sauce on TOFU (believe it or not!). TRY IT sometime! GRILLED BBQ Tofu. Oh and also I love to eat it on grilled Portabello Mushroom burgers, YUM!!

  18. Your food looks fantastic!! I love all kinds of bbq but, one of my favorites is shrimp wrapped with bacon and covered in bbq sauce. Skewer the shrimp and grill. Yum, yum!

    I would love the BBQ sauce! I just purchased a brand new steel propane grill and have a blast grilling.

    I plan on using this on BBQ Chicken. I am half asian and we love it! (although I heard that the brothas love it more. Only if I could hook up a waffle maker on my grill, I would be RICH!)

    I love all sorts of BBQ sauce and always like to taste new brands. I like the hickory version the best, the kind that has a little zing to it.

    How do you guys enjoy your BBQ sauce on grilled items? Do you like to cook the food, take it off of the grill and then place the sauce on it, or do you like to apply the sauce while its on the grill and get the baked on sauce on your food?

    Hook me up with the sauce, I will use it til its gone. I usually have UFC parties at my house and will use this sauce on a grill party so one bottle can reach several people.

  27. OMG your meatloaf picture is awesome! My favorite use for BBQ sauce is DIP! I dip just about everything in sauce! Second favorite would be ribs. MMMM….ribs…..I would love to try your sauce.   35. Baked potatoes. I LOVE to put just bbq sauce – no butter, no sour cream, no extras… just give me the bbq sauce and a baked potato. If you haven’t tried it… try it. You’ll become addicted just like me. :o)

  37. That meatloaf looks amazing! I guess my favorite things to use BBQ sauce on is BBQ chicken and BBQ ribs. I also make my version of Chili’s Monterey Chicken which calls for BBQ Sauce to be spread on the chicken, then bacon, then cheese. Followed by diced tomatoes and green onions. You can bake it or cook in a sillet.

    Hi Veronica, I think that sauce would be excellent mixed up with shredded roast beef for bbq burritos or taquito’s. I was also thinking maybe bbq pork nachos. My husband loves Mexican food and bbq, so why not combine them right?
