Raspberry Zinger Poke Cake

So I’ve turned into a food blogger rebel.  I don’t cook or bake, and when I do its favorites I’ve already posted recipes for.  Also, I’ve been eating a lot of Taco Bell.  Bad food blogger!

Speaking of Taco Bell, I can’t believe I’ve managed to keep it under wraps for so long, but I think I might have ITBES.  I may or may not drink the sauce packets to get me through to my next Taco Bell fix.  I even put the sauce on my hard boiled eggs and I can almost pretend I’m eating real Taco Bell when I’m snacking at work.  I feel a Taco Bell intervention coming my way, so I’m packing my bags, ready to flee to the nearest Taco Bell to set up permanent residence.  Pretty sure the employees will protect me from you crazy non-ITBES people.   YOU CAN’T MAKE ME QUIT TACO BELL!

So while I’m totally out of control when it comes to doing all the things a good food blogger should do, I at least have a few photos saved from the days when I was a good girl and taking photos of things I’d baked and cooked.  Such as this Raspberry Zinger Poke Cake.

I made this for Den’s birthday last December, right about the time the last Raspberry Zingers were disappearing off store shelves.  Sad times for Raspberry Zinger lovers.  Well cry no more, for you can still get your fix with an easy poke cake!  It’s not exactly the same, but it’s good stuff, nonetheless.

I created this with help from Suzie’s recipe and Renee’s recipe, and it couldn’t be easier.  Poke cakes are especially good for warmer weather (if you are fortunate enough to be enjoying some right now) because they are served cold, and are really refreshing on a warm day!  Or, let’s be honest, it’s also quite nice on a cold December day as well.  At least we thought so. :)

Raspberry Zinger Poke Cake

1 white or yellow cake mix* (also water, vegetable oil and eggs/eggs whites as instructed on box)
1 box (3 oz.) raspberry-flavored gelatin
1 c. boiling water
1/2 c. cold water
1 container (8 oz.) Cool Whip, thawed
¾ cup shredded sweetened coconut

Bake cake according to package directions and cool completely. Pierce cooled cake all over with a fork. In a small bowl, stir gelatin and boiling water until sugar is dissolved. Stir in cold water. Pour over cake, cover, and refrigerate 2 or more hours (overnight is fine).  Frost with whipped cream and sprinkle coconut over the top. Keep refrigerated until ready to serve. Serve cold and refrigerate any leftovers.

    Oh, Taco Bell. Don’t get me started. When Hannah was little she and I could eat there for around $3 bucks – I have yet to try the Dorito tacos yet though – are they good??

    • YES!!!! They are so good! And the Cool Ranch ones are even better, which surprised me. I’m trying to make healthier choices so I haven’t gotten any of those lately but dang, they’re so hard for me to resist.

  2. No joke, I am sitting here eating taco bell while reading this! Too funny. And no, we are NOT enjoying warm weather but I would still love to eat this cake. I just saw one similar to this that my daughter wanted to make. I’m curious, why do you not recommend Pillsbury?

    • The yellow one might be OK, but the white one is SO incredibly moist that it might be kinda mushy with the jello poured over it. Betty Crocker and Duncan Hines aren’t dry cakes, but are drier, so I think they’re better for this purpose.

  4. yum! such a pretty color! and on the record, i don’t like taco bell (but off the record, i really enjoy stealing bites of my husband’s taco bell…haha! the cool ranch tacos are my new secret love).

  5. This reminds me of the jello cake we would have for school lunches when I was growing up, and it was my fav! But, I’m sure yours is MUCH better! I love the coconut on the top!

  6. We are sisters, I love Taco Bell too. Especially since I got out of the hospital I craved sweets and yes, Taco Bell. I love the doritos and cool ranch tacos, chicken mexican pizza and baja chicken chalupa….yummy!! :D The cake looks delish!

    • Omgosh, YOU DO?! I didn’t know that!! I shouldn’t have hid my “problem” for so long–I had no idea. :D I love the Cool Ranch and Doritos tacos too, and am TRYING not to order the stupid Mexican pizzas but yeah, I crave them a lot. I like the beef supreme gordita over the chalupa, I think bc of the soft wrapper…but trying to avoid that one too. Oy.

  8. You just brought back a flood of memories, the zingers and poke cake. Poke cake was always one of my favs to make because it was easy and pretty! I like the raspeberry zinger twist to it.

  9. I remember making this growing up. We thought we were soooo cool and culinarily cutting edge—especially at Christmas when we would use lime and cherry jello! Thanks for making me remember about Zingers too. (Do we need to do a Taco Bell intervention?) :)

  14. This may not help but I just saw that Doritos now has a Doritos Loco Taco flavored Dorito. It is like a chip within a taco within a chip?! :)

  16. I haven’t had Taco Bell in ages lol I like their fries supreme or whatever its called! This cake looks so pretty and fairly easy, I want to make it and then eat the whole thing :)
